To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 可能咖啡比較能刺激大腦運作,比較能引發靈感,很多偽文青均為不折不扣的咖啡控。

Cafe常見的麵包類蛋糕類自然不少,熱食方面頗有特色的應該是egg cocotte吧。
egg cocotte的lunch set售$85,包一杯飲品來說也差不多。
當天的兩款選擇是洋蔥with蘑菇 or 芝士with車厘茄,我選了前者。
Order時店員已告知需要等較長時間,但會先出咖啡給我。
喝著咖啡看著書,想不到一等便等了約20分鐘。不過這天時間不趕,我本來就是要來hea時間,所以完全沒有問題。

熱熱的鐵鍋裡,頂層一隻太陽蛋,蛋白還有點半熟
下面的則是說好了的蘑菇與洋蔥,還有最底層的麵包,還有少量的香草作調味。
食材份量比例大概是蘑菇3/5,麵包1/5,蛋和洋蔥各1/10。
味道有點raw, 輕輕的調味只是適量的引出食材本身味道。
唯一我認為雖改善之處,是蘑菇的比例。

如上所述,蘑菇佔超過一半的比例,而蘑菇本身味道較濃,不像麵包般屬於主食類。若果可以平衡各食材的份量或以其他食材取代部分蘑菇的份量應該會更好。

這個egg cocotte我最喜歡的則是吸收了食材與醬汁味道的麵包,以及半熟的太陽蛋。

店內播放著的Random Western Music,都是folk系的悠揚音樂,聽起來令人心情舒暢。不論在這裡看書、工作、還是與知己談天都是絕佳的background music。

「麻雀雖小,五臟俱全」
全店面積不大,座位不算多,大概只能容納二十人左右,卻有幾種座位選擇配合不同喜好

1. 落地玻璃窗旁的counter table
2. 籐椅table位
3. 階梯與cushion構成的大樓梯位
4. 梳化與椅的舒服餐廳位

樓底高,向上望那種空曠感消解平日狹隘空間的壓迫感。
大大的落地玻璃,連接了店內與街外的空間,陽光充足之餘看起來更空廣。

5. Good Service

店員(店主?)熱情如何能為美食之旅加分?
由你進店的那一刻,
一個燦爛笑容開始。

今次的egg cocotte在order時已被告知要等一段時間,但店員主動說會先安排餐飲先上,可以邊喝邊等。有了這麼一句,一個安排,有了心理準備,等候的時間也會較易過~~

一杯飲品,一份食物,由店員小心送上,看似簡單,卻是非常重要的basic service。
試想想,如此簡單的事情也做不好或不care做不做,客人自然也失去任何期待及期望,最後的satisfaction也會扣分,所以基本的事情也是非常重要

在東大街街尾的madera cafe像是舊區裡的一道清泉,不單有街坊和文青,對於其他過客亦是一個十分舒適的休息地。
從大街走進四四方方的cafe小店,真的彷如進入了一與世無爭的世界
