晌一啲商廈開私房菜,絕對唔喺咩新鮮事,不過,私房菜一詞我覺得有啲用得濫。近呢三幾年,由於租金升幅飛漲,有好多具質素嘅餐廳都索性上樓,並以小店形式經營,控制好成本,更可加強同客人嘅交流。友人未食過上樓嘅法國餐廳,近來見呢間Le Paradis風評不俗,4道菜晚餐唔使4百,值搏率高。餐廳位於加連威老道嘅商業大廈,唔喺咩出名嘅食廈,相對位置較冷門,不過,始終晌旺區,唔難搵。餐廳設有室內同室外,但店員話剛經歷颱風,室外位置暫時唔開放。而室內環境唔大,概略一數都喺得14個位,所以,幾容易滿座,訂位自然喺常識。內裡以灰色襯棗紅,燈光幽暗,佈置幾有法式小館情調。餐牌設計比較簡單,完全無咩裝飾或排版,只喺白底黑字,紅字喺廚師推介嘅菜式。我哋一心意屬晚市套餐,所以,散點餐牌真喺無咩點留意過。唯可惜室內燈光實在昏暗,所以,個套餐餐牌影到懞查查,勉強可以睇到啲字。4道菜晚餐,定價$398 + 10%,並唔包餐飲,前菜、沙律、湯品都喺指定款式,雖然可以好好控制食材嘅損耗,但感覺有欠彈性,始終有啲人想實惠啲食套餐,卻可能真喺有啲食材唔啱食,多一個選擇就叫好重保險。哈密瓜、西班牙風乾火腿(30個月)伴意大利陳年黑

哈密瓜、西班牙風乾火腿(30個月)伴意大利陳年黑醋橄欖油

30個月熟成嘅風乾火腿,果然油潤甘香,只喺得薄薄一片,配兩件哈密瓜,有啲未夠喉咁啫。此外,墊底嘅沙律菜喺完全無調過味,油醋一滴都無加,感覺哋差啲。

煙鴨胸田園沙律配無花果乾柚子蜜醋汁

反而,個沙律就真喺幾好食,沙律菜配上特製嘅柚子蜜醋汁,酸爽醒胃;襯煙鴨胸倒唔覺得有咩特別,相反,加入少少無花果乾卻有種畫龍點晴之效。

黑松露蘑菇湯

以往食唔少西餐,甚至乎法國菜,都會提供餐前麵包籃,就算唔喺餐前,去到餐湯,都會伴上三數片特色麵包,不過,呢度就唔興依家嘢。個湯本身做得有水準,菌香味濃,就算菌粒刻意保持少少幼細碎粒,質感依然柔滑,只喺賣相欠奉。

幾道菜過後,嚟到主菜前,一般而言,好多時都會以雪葩作間場,不過,晌度就無供應。主菜方面,只喺3揀1:燒春雞、比目魚、油鴨脾,選擇並唔多。

扒法國燒春雞伴黑松露忌廉汁

早前晌Chez Moi依食過一次煎焗法國鵪鶉釀巴馬火腿、白菌及忌廉芝士,實在精彩,法國春雞名氣亦有番咁上下,所以,對此扒法國燒春雞有一定期望。春雞喺半隻份量,但就算半隻都唔細,感覺比一般遇到嘅春雞大隻,肉質一般,未喺好嫩滑,幸而外皮夠脆,補番少少分。啲伴菜反而有驚喜,炒雜菌、法邊豆、細甘筍及紫薯蓉,好食。

對比起隻春雞,件油鴨脾好食好多,油鴨脾非第一次食,知道油封鴨脾喺歷史悠久嘅法國菜,既要風乾,又要煎烤,並以味道油香、口感鬆化為特色,今晚所試到嘅油鴨脾,完全表現出應有質素,外皮香脆,一絲絲嘅鴨肉酥香鬆化,油香而不膩

法式焦糖燉蛋

今晚嘅是日甜品就喺經典嘅燉蛋,雖然唔喺一道好複雜嘅甜品,但做得好都唔易。燉蛋做得挺身得嚟,口感幼滑,充滿蛋香,面層嘅焦糖既薄且脆,手勢上乘
。套餐並未包餐飲,就算飲品嘅餐牌都喺啲餐酒或啤酒,想飲杯咖啡襯甜品都唔得。

由前菜、沙律、餐湯到主菜,感覺店方都唔喺太注重賣相,菜式都喺四平八穩。而味道上,亦未有太大驚喜,都只喺穩打穩紮。至於整晚用餐只喺4道菜,足足用咗近3個小時,單單等上餐湯也呆等半個多小時
,上菜速度之慢,真喺好難想像,餐後先聽到侍應講今晚只得一位廚子,而侍應亦只得佢一位,招呼一環實在要改善吓。
