To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 上週末在海洋公園歌酒節玩了一個愉快晚市,更趁機來到海洋公園夢幻水都海洋奇觀區的海龍王餐廳吃了一頓精緻美味的晚餐。海洋公園的海龍王餐廳應該是全香港首間及唯一設有水族館的餐廳。面對無敵水族館景觀,各款魚在面前游來游去,對大朋友與小朋友來說都是有趣的用餐體驗。由今年3月份起至六月底,海洋公園邀得米芝蓮餐廳總廚及顧問陳國強師傅為海龍王餐廳設計共六道菜的新派中西融合「嚐味菜單」,由下午4時30分起供應,每位$688。如果加點wine pairing葡萄酒配搭的話,每位另加$300。第一道菜是賣相精緻的頭盤拼盤,包括燒汁日本帶子、牛油果阿拉斯加長腳蟹沙律、果木煙燻鴨蛋及麻辣澳洲角鮑共4款。其中果木煙燻鴨蛋的燻香味突出,加上軟滑的溜心蛋黃,是我的最愛。第二道菜是京燒泰國老虎大蝦,肥美爽彈的大虎蝦配上四川豆板醬醬汁,味道濃郁而不過鹹。接著是黑虎掌菌牛肚菌配竹笙桃膠燉烏雞湯。以養生健康食材如黑虎掌菌、牛肚菌、竹笙、桃膠與烏雞等燉煮,湯頭清又甜。芙蓉金湯意式風乾火腿鱸魚卷,魚肉鮮嫩。魚肉卷下的滑溜燉蛋白,亦同樣美味。第五道菜是鹿兒島豚肉叉燒拼宮廷茶香法國春雞。我們尤其喜歡以法國春雞炮製的茶香雞,大家都吃得

最後是一客3款的甜品拼盤。流沙金球煎堆仔外脆內熱,而滿族傳統小吃「驢打滾」及酸酸甜甜的紅桑子奶凍,味道也很不錯。

陳師父這「嚐味菜單」融入了川、魯、粵及淮揚中國菜四大菜系概念,以西餐精緻擺盤吃中菜。在主題樂園水族館內,坐得舒舒服服、品嚐精緻美食,真是難精彩的體驗呢~
