十月又是蟹迷發狂的日子, 灣仔會議展覽中心的「新滬坊」近日推出「滋味蟹宴」 ,將整隻蟹分拆成不同的菜色,實在令人期待! 滬坊小碟擺碟亮麗,有如一幅圖畫,真係未食眼睛已經享受了一次。 舟山頂級海蜇頭清新爽脆,口感一流,最啱用來送酒。 涼拌海參質地滑溜,辣辣地食落幾惹味。 陳醋排骨好香陳醋味,食落幾乾身,又係送酒良伴。 麻醬西紅柿如果囝囝在席中,一定會叫encore,陣陣幽香麻醬味,與微酸的蕃茄好匹配。前菜過後,先上湯羹。 花膠瑤柱蟹皇羹舀一下,質感濃稠,花膠切絲加上瑤柱,是香滑鮮甜的組合,再加上蟹皇的豐腴,實在令人欲罷不能。 上海古法蒸蟹鉗蟹鉗早已褪殼,泡浸在雪菜肉絲湯內,吃起來啖啖肉,非常過癮,蟹肉又帶有雪菜的香氣,好少機會試到。 蟹肉金汁豆腐絲毫不覺腥味,南瓜濃稠的質感,散發蟹肉的甜美,軟滑的豆腐,令口感更佳,試試下點胡椒粉提香,又是另一番風味;同碟另一款是炸豆腐,外層微脆,內裡軟熟,同是豆腐,卻有兩種截然不同的口感。 油雞欉鮮菌焗糕蟹畢竟是滬菜,濃油赤醬本幫菜色走不了,加入了油雞欉菌,吸收了醬汁及蟹汁,味道更誘人,蟹肉非常入

畢竟是滬菜,濃油赤醬本幫菜色走不了,加入了油雞欉菌,吸收了醬汁及蟹汁,味道更誘人,蟹肉非常入味,蟹身沾有不少蟹膏,吃起來更是齒頰留香。
