To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 先來一個美好的邂逅,夏日炎炎,川辣的冷盤也是我首選的開胃菜,先來這份「蒜泥白玉」,切成一片片的五花豬肉內圍著了薄薄的青瓜,擺盤中間堆了一些蒜泥及青蔥,食用時用筷子拌合,入口香鮮微辣,蒜香味很濃郁,也散發了清新的青瓜香氣,而微溫的五花豬肉也切成薄片,呈現了質感鮮嫩,更顯得爽口鮮香。

川菜之中的涼菜,當然不少得食份「口水雞」,浸在辣油中的雞肉銷滿了大堆的花生及青蔥,內有青瓜,仲有白芝麻,雞肉擁有麻辣醋香的滋味,雞皮夠薄口感爽脆,肉質嫩滑,滲出惹味的芝麻香,辣度皆可隨自己口味調校,雞肉份量多,真是物有所值。

店中的招牌滋潤湯水就是這個「青城山杏汁白肺湯」,一碗熱騰騰的湯水端過來,湯水色澤呈奶白色,散發陣陣的杏香,香氣撲鼻,一舀起的湯料都不少,有雞腳、菜乾、肉排等.....湯水口感都好順滑,清肺解熱又有滋補潤肺養顏的功效,呷一口已經暖入心扉。

老壇子酸菜魚($238)
主角點了店中的招牌菜之一的「老壇子酸菜魚」,湯頭可以挑辣度,我選擇了小辣,呷一口湯底有少少辣香,味道微辣不會嗆喉,細嫩的桂花魚不腥,魚片不散不碎,鹹中帶鮮,酸菜味道酸爽,與魚肉可說是非常美妙的搭配。湯內還有滑溜的寬粉,它吸盡湯水的精華,煮得煙韌入味,吃起來都不膩口。而萵筍切得細薄,味道爽甜,整體湯頭酸、鮮、鹹、香兼備,風味也十分平衡。

吃到最後仍然意猶未盡,於是追加一道甜品糕點,入口已經有清幽的桂花香,可以令口腔消除異味,當中有杞子的香甜,可以明目養肝之功效,它的賣相很晶瑩剔透,吃件涼浸浸的糕點,真是透心涼快。
