支竹火腩紅炆龍躉翅煲($498)


仍然記得上次係龍苑攪生日飯,其中一味就係炆班翅。

須知道,用得炆班翅,點都要有咁上下體型,至少都大條過「條頭班」,龍躉皮先夠厚同起膠。

而部位就會選擇魚鰭、魚鮫及划水位,其實自己最鍾意魚鮫位,因為肉質最嫩滑,加上吸收了燒肉的油香,更是人間美味,尤其是用來配杯啤酒,更是絕配。

甜品當然是柚子脆麻花,即叫即炸,而且色澤金黃,入口酥化,澆上柚子蜜,味道更可口。
