The Victuals' Pulled Pork Roll Citrus Gel, Ice Plant, Lime Provencal

用咗蛋捲嘅方式去設計呢度菜,面頭紅色嘅係醃咗嘅節瓜,內餡則用上雲耳和帶少許辣味手撕豬,而醬汁就用上柑桔醬,充滿東南亞嘅特色。

15 Days Dry Aged Quail Legs (2 pcs)
一睇細細隻就知道係妙齡鵪鶉,用咗15日去乾式熟成,最後加上雞油去烤製,你哋睇吓啲肉質就知幾嫩。

Tomato Lobster Soup
橙紅色嘅湯身其實係蕃茄底嘅龍蝦湯,帶少少蕃茄嘅酸甜味,飲完都唔會覺得太濃和膩。


Chicken Ragu with Poached Japan Orchid Egg
白色嘅其實係蘭王蛋整成嘅流心蛋,切開可以見到橙紅色嘅蛋漿。面頭用左枝竹打成嘅foam,配搭底層炸到香脆嘅薯仔雀巢,整體口感非常豐富。

30 Days Dry Aged "Caviness" Prime Striploin 150g (+$128)
用左30日熟成嘅Striploin,有濃厚嘅肉汁同均勻嘅脂肪比例,口感亦都軟腍又多肉汁。

30 Days Sage Butter Aged Kumamoto Pork Collar
豚肉熟成就真係好少見。相當厚身嘅熊本豚肉扒,用左Sage和牛油醃製再香煎,同樣口感軟腍又有脂肪嘅香味。

White Chocolate Dome
由白朱古力製成嘅脆餅,灑上檸檬香草忌廉、蘋果肉和柚子醬,充滿香草味,夠晒清新。

The Victuals' Tiramisu + $88
提拉米蘇外層有一片片杏仁脆餅,內層係幼滑又有酒香,配搭旁邊嘅朱古力塊帶返少少苦澀味出嚟。
