去年與友人戲言打賭,若能成功完作全馬賽事可以無條件得到一個願望。皇天不負有心人,今晚就係朋友兌現承諾之時。其實同友人講左願望好簡單,就係食一餐好嘅迎接新一年所以揀左呢間隱藏於鬧市中嘅日本料理店,食個OMAKASE獎勵下自己。既然朋友話要找數,就唔使錫住佢荷包喇,所以點左個18種加卷物嘅祥鶴,等佢肉赤一下。前菜先有呢度自家醃製嘅蘿蔔以及文蛤清湯。蘿蔔酸酸脆脆的,十分開胃。而係寒冷嘅天氣下進食一碗暖胃而清澈鮮甜嘅文蛤湯,即時將寒意驅走不少加上蛤肉飽滿有彈性,不錯。之後係赤貝刺身,貝肉切成一梳梳做成蝴蝶型的造型,為本來爽口鮮甜嘅貝肉增加不少口感。沾上少許柚子醬油令鮮度更突出。而日本珍蠔則以小量蘿蔔泥及蔥花調味,將蠔肉本身嘅飽滿及甜度表露無遺,令爽脆裙邊及蠔囊係口腔嘅味道久久不散。之後係火炙鱸魚及平目魚酒盜。鱸魚經過熗燒後魚皮焦脆帶半熟魚肉軟軟腍腍的,非常易入口。而酒盜即係以魚內臟加鹽腌漬發醇而成,咸香味道十分強烈。但配上清淡薄切嘅平目魚肉兩者中和下,腥味唔會好重,係一道幾好食嘅下酒菜。若然配上清酒就更好味了。白子及海膽湯葉係食完酒盜之後顯得格外香甜及順滑。因為湯葉嘅豆香加上海膽嘅甜,大大地刷

白子及海膽湯葉係食完酒盜之後顯得格外香甜及順滑。因為湯葉嘅豆香加上海膽嘅甜,大大地刷去酒盜嘅強烈味道。令火炙白子嘅奶滑更加明顯。師傳咁嘅味道安排堆疊,令三者嘅味道印象深刻

鰤魚刺身係冬季嘅時令魚,肥美嘅魚肉入口鮮甜。加上厚切關係咬落去重重嘅油脂香味十分可口。而鮟康魚肝質感比想像中結實,但沒想到入口味道濃郁到好似食緊鵝肝咁,係柚子醬油配搭下味道清爽了不少。

帶子海膽卷係師傅手中接過後一定要即刻食,因為紫菜實在係太酥脆了,炙燒完嘅半熟帶子温度微暖夾住冷冷的海膽,反差口感同鮮甜味道係口腔內徘徊,滋味非常。

之後係兩款煮物:蒸鮑魚及煮八爪魚。兩者都煮得好入味同彈牙,將肉質嘅深厚味帶出黎,細嚼之下醬香味道慢慢散發出黎一啲都唔會覺得混濁。當中嘅蘿蔔吸收晒湯汁嘅精華,味道唔比兩個肉主角遜色。

刺身之後就進入壽司部分,呢度嘅醋飯用上赤醋調味,酸味温和之餘更多了一絲陳郁香氣,味道更搭魚肉。店員更附上濕紙巾等我地可以用手直接進食,口味更佳。

赤血引,亦係冬季時令魚材。魚肉油脂較少反而甘甜同爽脆,因為味道之美媲美拖羅,所以都係日本好少會出口嘅魚種,依家可以係呢度食到真係好講師傅嘅眼光觸覺同彩數

海膽飯又係一道邪惡菜式,鮮甜嘅馬糞海膽入口即溶,與醋飯一同入口間中又有少少竹鹽嘅咸味點綴,差啲唔想將佢吞落肚俾佢留係口腔耐一點,享受耐一點。

最後係吞拿魚蓉手卷,眼看師傅用火槍煉出吞拿魚油再混和魚肉及飯,單單係視覺已經係一種享受。接過手卷後一啖咬開,香滑魚蓉/紫蘇/脆卜卜紫菜及漬蘿蔔各種五味雜陳,滋味就係咁樣造就出黎的了。

最後嘅最後,就係一碗熱辣辣嘅豆腐魚湯。奶白濃郁嘅魚湯完全係集魚嘅精華凝聚而成,甜香而味美。

與友人邊聊天邊品嚐着呢個香滑嘅抺茶奶凍,諗起跑全馬時嘅點滴。其實同呢度嘅師傅一樣,憑着堅持及熱誠去完成自己嘅目標,係一件值得自豪嘅事情。食完亦再同友人打賭,下年再完成全馬會再黎呢度再食過。
