進入冬天又是進補時間,襯凍凍地去了銅鑼灣的蛇王熙食蛇羹,星期五晚市時間門口大排長龍,但翻枱的速度都算快,等了十分鐘就有位。每枱都必點招牌套餐,有花膠燴蛇羹、臘味糯米飯及拍青瓜雲耳。青瓜爽脆開胃,有淡淡蒜香。蛇羹濃稠程度適中,以雞湯做底,花膠入口帶點爽,木耳、冬菇等配料,當然不少得主角蛇肉,味道鮮甜。糯米飯煙韌軟身,臘腸一咬開油脂滲出、潤腸皮脆肉香,反而臘肉就比較肥。這裏還有多款燉湯,其中川芎白芷天麻燉魚頭更是我至愛,濃郁的藥材香味溶入湯內,入口帶點苦,然後回甘。除此之外,燒味都是招牌菜,燒腩仔皮脆肉嫩,半肥瘦的腩肉入口鬆化。叉燒比燒腩更好味,半肥瘦的梅頭肉燒至表面帶焦,蜜糖甜香滲入肉內,肉質嫩腍帶點肥。
