「太爺雞」與「鹽焗雞」、「文昌雞」和「脆皮雞」合稱為粵菜四大名雞,其中又以「太爺雞」工夫最多,幾近失傳。「太爺雞」即是「茶香雞」,創立於清末,以江蘇煙熏炮製的豉油雞,先以滷水浸熟,再用甘蔗渣、茶葉加糖熏,好處在於入味非常,皮香肉嫩,吃後口有餘甘。今天叫了碟肥义太爺雞飯送例湯傳统烧臘飯店例湯,但勝在夠熱。雞皮色泽枣红,光滑油润,皮香肉嫩,食落陣陣玫瑰露香味,反而不覺有茶葉香味。义燒带点肥,肉質腍滑。
