趁住未出發long trip, 再加上年尾出bonus, 又有籍口食餐好, 首選一定係omakase, 朋友book咗中環「杣」今晚一齊食餐好。餐廳門面低調, 內裡環境燈光昏暗, 幾有情調。晚市分別有兩個價錢, 我地今晚享用了每位$1980嘅dinner set。全晚由日本師傅主理, 對比多間omakase餐廳, 呢度嘅料理大多為熟食/漬物, 除了吃出鮮味, 更能食出師傅的用心製作。先付: 昆布濃湯清甜順滑, 素炸喜之次皮微脆, 魚肉鮮香, 伴有花竹蝦、鹽漬櫻花。前菜: 炸公魚甘香脆口、鴨胸肉嫩, 黑豆有淡淡甜味, 慢煮鰻魚配上汁醬, 更加鮮味。牡丹蝦肥美鮮甜爽口, 海膽提鮮爽口彈牙赤貝, 昆布漬石斑, 金目鯛爽口有筋絡, 北海道沙甸魚甘香鮮味。香霜蟹: 將蟹膏、蟹肉拆肉, 放上炸牛膀, 配有昆布菜漬花做汁, 鮮味十足!金目鯛立鱗燒: 鱗片脆口鬆化, 魚質有魚鮮味, 配了新鮮紫菜做湯。鰆魚配春菊椰花蓉: 魚鹹鮮, 蓉綿滑。到了壽司:松皮鲽: 魚質爽彈, 面層疊上了燒過嘅邊緣肉, 補充了甘香魚油有層次。鰆子鯛經櫻花菜醃過, 魚質嫩滑, 有少少櫻花菜嘅清香。赤身魚質綿滑鑑魚魚油豐富冇筋脆紫
