曾經看過一個旅遊節目,介紹美國西部如何煙燻烤牛扒,看到那些煙霧及火焰、肉汁欲滴之片段,隔空也垂涎,至今難忘!得知旺角朗豪坊開了一間 Smokehouse Bar & Grill,主打煙燻慢煮及燒烤美食,配備的煙燻烤箱嚴選產自德國的 BASTRA,這款烤箱以精確的烹調及可靠性而聞名國際,能烹煮成各款不同風格的肉類,正中下懷!2月2至12號更邀請到美國名廚 Jay McCarthy 擔任客席主廚,烹調德州菜式,機會難逢,馬上動員! 德州式煙燻肉類果然與眾不同,那種濃烈的煙燻香、肉脂之香、加上美國牛肉之嚼勁,完全是德州牛仔的曠野風格,滿足感極澎湃。 個人最欣賞 Jay 的巧手人氣菜式之一的 Bourbon Cured Flank Carpaccio 薄切牛肉片色澤深紅,牛脂肪呈白色,若非擦覺邊位的煙燻烙印滿滿,酷似風乾火腿。 夾起方知身長而大片,入口有嚼勁,但又軟熟,味道濃郁,嚐到蜜糖甜,之後辣辣地,胡椒及煙燻香明顯,非常討好。 肉類盛宴 $498餐牌上的肉類盛宴,我認為是必吃之項目,盡顯主打食品煙燻之特性。 盛宴包括招牌煙燻牛胸肉、墨西哥辣椒芝士腸、圖林根腸、烤豬肋骨、手撕豬肉、檸檬椰菜沙
