Restaurant: The Chairman

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 提早兩個月預約,畢竟是亞洲最佳餐廳,前來用膳前已萬分期待,做定功課。一坐下來,像上茶樓一樣,侍應會問喝什麼茶,我們叫了茉莉。如果期望侍應服務態度殷勤,恐怕這裏會讓你失望,雖然未至於像茶餐廳般,但服務欠交流欠溫度,整體而言侍應都很冷淡。食物方面,我們點了六道菜:🔸蜂巢芋泥煙鴨盒🔹雞油花雕蒸大花蟹配陳村粉🔸話梅肉桂糖醋排骨🔹十八味豉油雞🔸薑米叉燒菜甫蛋炒飯🔹杞子雪糕整體食物質素中上,用料講究,製作有心思,當中以話梅肉桂糖醋排骨最有驚喜,外皮像燒肉和乳豬般香脆。因為用心選購原材料,調味亦有所節制,完全能吃到食物原有的鮮味。招牌菜是雞油花雕蒸大花蟹配陳村粉,幾乎每張枱都會見到。所用陳村粉很滑溜,吸收雞油花雕汁後更是滋味無窮,可惜本人不是太「頂得順」濃烈的花雕酒味。花蟹十分鮮甜,但未能與雞油花雕汁融合,不像是同一道菜。十八味豉油雞(例牌)雞肉不會浸過熟變得「鞋口」,比一般豉油雞有層次,非常入味。薑米叉燒菜甫蛋炒飯炒飯炒得乾身,料亦夠多。放在一般餐廳還算可以,但近$200的價錢,確實有點失望。炒飯沒有薑味,也吃不到菜甫香,叉燒失色,欖菜倒是有點喧賓奪主。話梅肉桂糖醋排骨 $75/件 最少四件
