最近在圓吃了一頓非一般的素菜晚餐,Tasting Menu有十二道菜,廚師們堅持不時不食,用上多元化的矜貴食材,配合中西合璧的烹調技術,亦不使用「五辛」,創造出來的每道菜式都精緻吸引。這道梅菜•東坡肉不論賣相和味道都猶如平常吃到的東坡肉,廚師將冬瓜煎香,然後慢煮將冬瓜上色入味,並釀入梅菜和皇菌,冬瓜入口軟綿,梅菜味道鹹甜並重。松茸菊花浮萍的湯底用了松茸清燉而成,清而不淡,入口充滿松茸的清香,嫩豆腐被切如絲般幼細,盡顯廚師刀工。焗釀啡菇的靈感來自焗釀海螺,大啡菇中釀入杏鮑菇絲、沙葛絲和羊肚菌,再加上芝士烤焗而成,味道香濃惹味,又充滿口感。甜蜜•九宮格是由三款水果、三款中式甜品及三款西式甜點組成,賣相吸晴,味道各具特色,食材組合會按時令轉換,確保客人時刻充滿驚喜。
