To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 今次有幸去咗尖沙咀呢間話題新店「鮨燐」食飯,一踏入門口已經feel到濃濃嘅日式氣氛。師傅喺吧枱後面專注準備緊新鮮食材,成個環境都充滿住日式禪意。今次嘅Omakase全程都係用上日本直送嘅頂級食材,每樣菜式都係師傅用心炮製。前菜嘅慢煮鴨胸同金皮蓮藕已經話你知呢餐嘅水準,配埋柚子八爪魚子,層次感十足。接住就開始進入重頭戲,四國得島嘅生蠔配柚子啫喱清新可口,浜見獅魚腩兩食更係玩得好有新意。燒灸嘅做法將魚嘅鮮味發揮到極致。淡路島針魚配薑蔥醬油醬,簡單配搭卻又夠晒驚喜。壽司部分更加係一絕!中拖羅配紫蘇葉同淡雪鹽,魚肉油香濃郁;燒大拖羅加日本蔥同紫菜,香氣四溢;金雕魚立倫燒嘅魚汁香濃得嚟又唔會太重。每款壽司嘅米飯都係師傅精心調味,軟硬適中。至於北海道馬糞海膽同牡丹蝦都係新鮮到爆,甜味十足。最後嘅麵豉湯用三款自家製麵豉調製,味道層次豐富又唔會太鹹,完美為呢餐畫上句號。無論係食材定烹調技巧都係一流水準,雖然價錢唔平,但以呢個質素同享受嚟講絕對值得!推介俾想試高級日本菜嘅朋友。
