最近我哋去咗一間極具口碑嘅日本高級餐廳,專門嚟體驗高質嘅Omakase。舖頭而家有季節限定優惠六五折🤩🤩,包14款廚師特選壽司,仲有前菜、餐湯同甜品。前菜佐酒小食,白螺內臟刺身配蓮藕片同昆布魷魚,螺肉鮮香甜美,肉質入口爽脆。內臟雖然帶少少微苦,但廚師用咗少少香甜嘅醋汁去配搭,完全帶出鮮甜味道。蓮藕片好爽脆,配上微辣調味,真係可以勁醒胃。昆布魷魚口感彈性十足,海藻漬嘅味道同魷魚鮮味交融,入口層次分明。伊佐木白魚肉質雪白通透,肥美甘香,質感柔軟,油脂豐富北海道鮮帶子鮮甜味濃郁,份量十足,口感如奶油般滑順,極之彈牙深海池魚肉質緊實,特濃魚味,搭配少許醬油,最重要係冇丁點嘅腥味九州車海老真係一絕,肉質爽脆,啖啖肉,再灑上少許柚子皮,入口清香寒鰤魚可以話係頂級食材,肉質厚實,口感幼滑細膩,油脂豐富,鮮味爆棚,真係冬天時零海魚嘅北海道北寄貝味道超鮮甜,先將肉身輕輕斜切幾刀,令入口更容易,仲可以品嚐到彈牙爽脆嘅肉身,同埋淡淡嘅海水鮮味右口魚本身嘅魚油比一般魚澎湃好多,師傅會用火炙嘅方式,先燒焦魚邊緣,帶來微微煙燻赤貝可以話係我覺得最好食嘅一款壽司。師傅細心將兩邊平均切開,然後斜切十字花紋,容易入口,非常鮮味爽脆彈牙,經拍打後仲會刺激反射神經,入口時聽到嘅“索索聲”三文魚子結實,鮮甜味十足,味道溫和細膩,冇丁點腥味,經醬漬嘅三文魚子可以大大提升鹹香味。金目綢係高級食材之一,師傅用火槍火炙一下魚皮,令魚皮焦脆甘香,再將火炙嘅魚皮放上魚肉,油脂溶化,層次感十足中拖羅唔使講,油脂分布均勻,冇筋,入口即溶北海道馬糞海膽,橙黃色海膽味道甘甜,質感細膩,幾乎入口即溶,鮮味極濃郁。火炙燒大拖羅,由於大拖羅高脂肪含量,用火槍可以大量逼出濃郁魚油,帶來更加濃郁甘香味火炙左口魚邊嘅魚裙邊刺身肉質柔軟細膩,入口即溶,味道甘香濃郁 continue reading
