今天同事Farewell,又來個團伙聚餐 ...訂了一煲老火湯,“赤小豆粉葛鯪魚煲豬橫脷”,湯固然鮮甜,湯料豐富,豬橫脷粉嫩,豬腩肉還有點咬勁,鯪魚肉還很香,沾點豉油,還算是一道美食。一條兩斤的黃皮老虎,做兩味,第一道“西芹炒球”,底味做得很好,拉過油,夠香,煙韌,有魚味。這道“紅燒斑頭腩”,我更喜歡,炆過的魚腩、魚皮,香、滑、惹味。“烤牛肋骨”,應該慢煮過再烤,有焦香,嫩滑但還有點彈牙。“燒鵝”,正常。“啫啫通菜”,料頭超香,把已很青脆的通菜提升了兩個層次。
