食友知小弟因工作關係,間唔時要跑入重慶山區,農家樂以外,重慶菜、四川菜更會接觸不少,故此就以為我好食得辣,結果就拉埋我一齊嚟尖沙咀嘅「川熙樓」嚐川菜。其實,「普通辣」我都OK,但實際上我唔喺個好食得辣嘅人,就算晌山區做嘢,小弟大多數都喺揀清淡嘅素菜食,查實,辣都其次,可以食少啲,甚至避開唔食,但油淋淋先攞你命,炒個菜都會落好多油 !友人曾經嚟過,佢話以前裝修比較西化,有啲卡位,反而覺得依然嘅環境頗別致,幾得意,挺有古時客棧小店格局,全場都喺木枱及長板櫈。是夜,人客較疏落,所以,我哋都可以靜靜哋咁傾偈。菜譜分頭盤、涼菜、特色菜、水煮、湯菜、辣子香鍋、湯羹、素菜、主食(飯麵)及甜品,部份菜色圖文並茂,辣定唔辣?有幾辣?可參考菜譜中嘅「辣椒」指數。前後試咗三款涼菜,藍莓山藥曾在別家餐廳試過,又睇睇川熙樓做得如何?蒜泥白肉稱得上川菜嘅涼菜名物,反而椒麻鹽水蝦屬於首嚐,幾款涼菜都有唔同賣點。藍莓山藥 $48每片山藥沾滿藍莓汁,均被染成鮮藍,而山藥口感粉粉黏黏,味道則帶有藍莓鮮味,兼有少少薄荷味及些少甜味。事後,跟店主傾開,原來個藍莓汁有加入藍莓醬增加色感,而甜味嚟自蜂蜜。蒜泥白肉 $78賣相比較

賣相比較做得精緻,肥瘦相間嘅五花腩均勻,入口感覺唔肥,最鍾意喺師傅刻意將白肉捲住啲青瓜絲,除令賣相更立體之外,食落更添清爽,辣椒蒜泥亦令到白肉相當惹味,又帶少少麻香。

外觀略帶咯嗲蝦風格,以高身玻璃杯盛載登場,再配點沙律菜做裝飾。晶瑩嘅蝦隻既大又爽,點點鹹味,並以花椒嘅麻較重,辣味則隱若少少,墊底嘅青瓜粒非常爽脆,咪錯過。

又野菌,又燉湯,啱晒我啦,一大鍋野菌燉雞湯送到埋嚟,熱氣騰騰,香氣四溢。一大碟湯渣被你驗明正身,牛肝菌、姬松茸、老雞、赤肉 ……等等,燉足幾粒鐘,真喺唔醇香順喉就有鬼咯,可惜一鍋得5-6碗,想飲多啲都難

餐牌中有一類叫特色菜,田雞(牛娃)實在好耐無食過,嚟一客自貢跳水娃,就睇睇有幾特色。望落去時,咪睇佢又辣椒,又青椒, 唔喺好辣咋喎,而田雞啲肉質十分之嫩滑,越食越滋味。

屬水煮、湯菜類,一大湯紅噹噹紅油咁款,未食都有種火辣辣嘅感覺。未知喺咪個辣湯,羊肉食落唔太羶,質感則頗軟腍,但就越食越辣,果然火辣辣,內裡仲有唔少大蔥同大豆芽,不過沾滿辣湯,食友就話投降,小弟就繼續挑戰

辣子香鍋類揀嚟爬爬蝦,想知喺乜傢伙,原來喺琵琶蝦,哈哈。依道菜以時價計,今晚就賣$50隻,叫多少隨意,亦唔見店員講話幾多隻起計。香麻爬爬蝦以大木盆盛載,顧名思義,主打喺喺香與麻,所以,盆面堆滿大量配菜:大蔥、紫洋蔥、唐芹、鮮胡椒、蓮藕條,誘發不同香氣;而琵琶蝦則藏晒晌底,雖然肉唔算多,但惹味到不得了

晌度食到嘅川菜,唔會只喺大麻大辣,稍為討我歡心嘅喺花椒都無放得太重,因為跑咗重慶山區十幾年,對花椒嘅麻,真喺食到「慣」,但就喺摜低個「摜」,而且,山區啲菜館下油超勁,就算唔喺地溝油,都食到你驚
