常言民以食為天,一方水土養活一方人,所以無論遠至天涯海角,近至城市鄉村,每個地方都差不多有自己標誌性的美食;以香港為例,因種種緣故,具代表性的食物亦有如繁星之多,其中一味--正宗的避風塘炒蟹可算頂流級美味;之所以有此一說,因在這天好友約局晚餐,選了位於尖沙咀區的正宗傳承兼人氣餐廳--喜記蟹將軍,從而讓我在味蕾上擴闊了美味體驗,兼長了當中的知識!座落於尖咀熙來攘往的彌敦道美麗華商場二期內,餐廳的裝潢從門面至內堂,都是走簡潔舒適高雅路線;場内以暖白色為主調,配以木紋色調及布藝裝飾,配上柔亮燈光,予人一種精緻而恬靜的用餐環境,極大地分別於創業期的艇上景致!餐牌排版精美,圖文清晰,予人極之良好的點餐指引;當然點選食物就交由好友發辦,一眾好友更放心;餐廳的上菜速度間距有致,當有細心一面;是晚的菜式豐富,且色香味俱佳!酸薑皮蛋,爽滑彈牙的蛋白呈現透亮的黑色,配上軟糯綿滑的蛋黃,其獨有的滋味馬上在舌尖展延開來,再吃上一片酸薑,令皮蛋的餘韻加上酸辣味,更加有開胃之效!紅燒乳鴿,皮脆肉滑,煙燻味絲絲入扣;鴿身肉厚而不柴,沾上亮光油份的外皮十分香脆,加上適當的調味,不用蘸上醬料來吃已極之美味!冰鎮清酒鮑魚

首先作為底料的蒜粒,炸至金黃炒至鬆化,夾起些許送進口内咀嚼一番,甘香可口而不感油膩,完全不粘牙,單憑這樣的功架已不同凡響!作為主角的蟹,其選用越南肉蟹,產自紅樹林濕地;(後來大廚親臨解說)乃因應氣候水土變化,由廚師團隊不斷嘗試研究很多產區的肉蟹才甄選出來,尤合以避風塘炒法來炒製,在過程中非得花費大量時間人力物力!

果不其然,肉蟹的肉質鮮甜美味,蟹肉十分爽滑!而蒜香,炒蟹及蟹膏的油份都彼此互相滲透,肉質中那股甘醇餘韻確實令人沉醉,齒頰也留香!肉蟹的殼雖然堅韌硬,但餐廳有專人相助剝殼,如此的增值服務讓顧客能更加輕鬆進餐,值得讚賞!
