星期六仲要開OT,去甘牌食番餐好少少。殊不知近兩點但仍大排長龍,果真犀利!叫了燒鵝瀨粉,油菜及鵝紅。鵝瀨特意點瘦燒鵝,始終沒有紅酒配襯難以去除油膩感。上菜時燒鵝排得工整,有美感,令人食慾大增。燒鵝表皮脆,油脂豐富,肉質嫩滑,只可惜腌料不夠或腌得時間不足,令燒鵝厚肉的地方味道略淡,廚師實在要多加留意。很快沽清的鵝紅(吃到一半,聽隔離檯要鵝紅一碗,卻已沽清),市面鮮有供應,皆因功夫多。鵝紅入口滑溜,只用少許鹽即帶出鮮味,無需額外添加任何味道,一流!但吃的時候,小心熨咀!
