要試一間火鍋店的烹調功夫,除湯底外,也可以參考一眾手打丸物的出品。這客「滾得囍宮廷拼盤」內含黑松露野菌鮮蝦丸、珍珠帶子墨魚丸、菠菜豬肉丸、手打芝心牛丸,以及手打鯪魚球五款丸物各兩粒,二人共享剛好。整體而言,各丸物的質素理想,亦富特色。黑松露野菌鮮蝦丸洋溢芳香的黑松露香氣。珍珠帶子墨魚丸既彈牙,內裡果真包著一小粒清甜的珍珠帶子。因含菜蓉的關係,菠菜豬肉丸的口感相對軟身,味道予人新鮮感。手打芝心牛丸及手打鯪魚球調味俱佳,充滿彈性。

要數全晚最邪惡的作品,必然是「黃金響鈴」,別無他選。在鬆化香脆的響鈴面上,外掛一層鹹蛋黃,絕對搶味。平日的響鈴可放湯輕炙三兩秒,這款響鈴則不建議這樣做,因會導致湯底過於油膩。
