位於荔枝角的西班牙菜小餐館Rustico最近有新總廚加盟👨🏻‍🍳 Javier Pérez Freire來自西班牙北部的加利西亞,曾工作於米芝蓮一星餐廳,並與米芝蓮星級大廚合作,尤其擅長烹飪加利西亞菜式✨ .為慶祝西班牙十月國慶日,Javier 特意設計了全新「西班牙美食尋寶之旅」菜單,當中包括西班牙十個地區的代表性菜材,讓客人在味蕾上遊歷西班牙🇪🇸✨是次菜單多款前菜、小食、主菜都令人非常難忘!卡斯提亞傳統烤乳豬是我最喜歡的菜式,慢煮12小時的乳豬肉質嫩滑無比,豬皮香脆得可用碟來「切開」🤣 而加利西亞頂級熟成Rubia Gallega肉眼風味濃郁,喜歡熟成牛的千萬不要錯過🐮 此外馬德里式燴牛肚亦是我非常喜歡的菜式之一,Javier搭配鷹嘴豆、辣肉腸、伊比利亞火腿、牛骨等多種食材以長時間燉煮,湯汁濃郁充滿風味🥰
