最近好友從外國歸來,我便相約這位多年無見的好朋友在銅鑼灣食漁獲浜燒。由於上次我試過這間餐廳不論環境及食物都十分不錯,所以我選擇這間餐廳與我這位好友好好洗塵。我跟餐廳預約了晚上七時半的時段,我們亦準時到達,被安排到吧枱位置。既然同得好友洗塵,我們就食得豪氣點,是晚我們點了以下食品,真的十分豐富!螢光魷魚鹽辛($68):螢光魷魚,我同好友都話聽就聽得多,食同見都係第一次,我們起初以為螢光魷魚上了水都係螢光色,我倆真係孤陋寡聞。螢光魷魚經鹽與醬油腌制後顏色啡紅,味道略帶咸香,一口吃下,鮮美甘香的汁液一湧而出,用來作下酒前菜十分合適。四人前特上漁獲浜燒盛合($1,308):服務員把盛合放上枱時,我們心諗睇黎我們今次真豪氣,大大盤不同種類的新鮮海鮮盡入我們眼簾,包括有珍寶大蝦X2,鮑魚X2,文蛤蜆X2,白蜆X2, 榮螺X2,活帆立貝X2,魷魚及響螺。今晚有一位大廚為我們進行浜燒,真的辛苦他了!白蜆:蜆肉經過香燒仍然十分飽滿,而且剛剛熟,可見大廚精湛功架,將白蜆放入口品嚐,白蜆的鮮味及海水的咸味互相輝映,鮮甜美味充斥了我的口腔,讓人有說不出的滿足感。榮螺:日本人食榮螺是原隻連同內臟一起吃,但店員說

榮螺:日本人食榮螺是原隻連同內臟一起吃,但店員說由於榮螺內臟味道帶有苦澀,所以這裡會先把其內臟去除,為免香港食客吃不慣,可見餐廳十分細心及了解食客感受。榮螺經過燒製後,味道不像白蜆般鮮甜,反而帶有一點點甘苦,但其肉質彈牙爽口,口感不錯。

文蛤蜆:蜆殼帶有紫色的文蛤蜆,平時很少機會能夠吃到,其蜆身形頗大,外型十分吸引。經燒製後的文蛤蜆,肉身帶有點粉色,而論到鮮甜多汁,個人覺得文蛤蜆是眾多貝類中最為出色的一種,鮮甜香味比白蜆更突出,入口嫩滑。

鮑魚:未燒前的鮑魚經常想逃離盛合的大盤,十分新鮮,但可惜,鮑魚大哥,今晚要同講句對不起,因為今晚你將會成為我們的美味佳餚。經過燒製的鮑魚口感彈牙適中,並不韌口,而且鮮鮑香氣滿溢,尤以鮑魚裙邊更為突出。

響螺:又稱粒貝,大廚先把粒貝剪成小塊方便燒烤,之後將清酒倒進殼內慢慢燒,當燒烤了一段時間後,我們便聞到清酒清甜的味道,即便以燒製完成。粒貝肉質雖然口感不算太嫩滑,但其鮮甜味配以清醇的清酒,味道亦不錯。

魷魚筒:經燒製的魷魚筒切開後分量十足,其口感十分彈牙並不韌口,個人最愛魷魚筒的旗位位置,因旗位薄身,肉質更加爽脆。

活帆立貝:活帆立貝體型巨大,開殼後肉質嫩白豐厚,大廚分別用了清酒及牛油兩種方式去烹調,用清酒烹調的帆立貝散發淡淡的清酒醇香,味道溫純,加上厚大彈牙的肉質,令人回味無窮。而用牛油烹調的帆立貝則充滿牛油的奶香,經香燒後,帆立貝貝殼周邊被燒至微焦,其散發的牛油香氣簡直衝擊著我們的嗅覺,令我們未開始品嚐已經垂涎欲滴。當把它放入口後,牛油的香味濃郁,加上燒得剛好的肉質,整體比清酒所烹調的來得惹味更吸引。

大虎蝦:其巨大身形根本大得有點兒過份,要把這身形巨大的虎蝦燒得好,真係少點功力都做不到,幸好大廚經驗豐富,區區這大虎蝦根本考驗不了他。大虎蝦經過香燒後,肉質保持彈牙而不過老,而且不開邊燒亦保留了一定水份,十分難得,味道帶有微煙的香氣,加上彈牙的肉質,醮上醬油吃,根本無得輸。
最後我們點了甜品作結,分別是柚子雪葩及椰子雪葩。
