為咗慶祝完成咗個大project, 今晚約咗好朋友食餐好的廚師發板慶祝。餐廳的廚師發板有兩款,一個係$1380同另一個係$1880.今晚目的係慶祝,所以對自己好少少,俾多少少食得豐富啲,就叫清酒同Omakase Set N, 包前菜三品、時令刺身七品、和食、小食和時令壽司七品, 並配上湯和甜品。越後櫻醉樂無極大吟釀 - 飲落清爽順口,酒質干辛,配搭壽司、刺身更有豐富口感。由一開始到最後一道甜品都充滿驚喜,好似睇咗一場表演。食材新鮮,食到食物的鮮甜原味, 再配搭醬汁將味道昇華,而每個菜都有分先後次序, 係高級廚師發板的基本。呢間餐廳除咗達到呢個要求,承載食物嘅器皿同擺盤,仲令我感受到每個菜式的鋪排同設計的心思。途中朋友講咗句,開始有d飽,師傅有細心問要唔要小飯。廚師發板就係要有廚師的細膩留意客人當下的需要,並同客人有適當的交流,適時主動介紹菜式同時都要留空間俾客人享用食物。同時,可以近距離欣賞師傅處理食材。呢一餐食盡不同的魚生,配上獨特的醬汁同烹調,每一道菜都係非常獨特。入到餐廳一坐低就見到會窩心的字條,有我地個名的多謝光臨的小卡片,估計係朋友訂枱時有留名。前菜有三款 - 有不同的口感同

接着是甜蝦他他,絕對唔係一小碟,份量十足,食到蝦肉的彈牙同蝦膠的黏口, 再配上蝦膏的湯,一口接一口, 鮮甜蝦肉同香濃蝦膏的味道交錯,蝦的鮮味大大提升。

廚師壽司刺身排了先後次序,中間安排了熱食,之後並用長野縣蕃茄間場,清清口腔的味蕾. 不得不讚個蕃茄味道好清並帶少少甜味,絕對發揮到間場效果。

壽司刺身,每件都因應唔同的時令魚生而配上唔同的醬汁,突顯魚嘅特質。食每一件壽司都有唔同口感同味道, 仲配上創新的型式表現出嚟,非常特別,令人印象深刻。

煙燻間八魚 - 師傅現場即席煙燻,透過透明嘅器皿,可以觀賞整個過程。呢個間白魚的味道好有層次,有煙燻嘅香味,魚的鮮味,再加上有黑松露的點綴,味道好豐富.

之後再送上暖笠笠的熱湯和甜品作結尾。盛載熱湯的器皿超有日本感覺,好似富士山。富士山入面唔係麵豉湯,而係乳白色的𩶘魚湯,好甜好有魚味,個湯攤凍咗都冇腥味, 烹調得好好。

甜品唔係同豆腐紅豆芝麻有關的,而係自家製菠蘿味嘅雪糕同蜜瓜。由於蜜瓜甜度好高,職員提點要先食菠蘿雪糕再食水果。菠蘿雪糕充滿果蓉同少少菠蘿嘅纖維, 甜得嚟帶有菠蘿嘅清新。蜜瓜真係好甜好甜❤️

聽師傅講今次的甜品自家制的菠蘿雪糕和蜜瓜都會因季節而變,遲d有機會係為冬天而設的甜品,令我開始有少少期待下次再嚟食廚師發板。
