現在經營火鍋店亦要多元化,到達位於九龍城的牛精皇,原來除了供應火鍋外,亦兼備剌身及游水海鮮。首度光顧,我倆還是保持原意,只吃火鍋。近日吃過多家新派火鍋店,選擇的都是近年流行的特色湯底,這處當然亦有,招牌牛精鍋、清湯雪耳海底椰豬肺湯及泰式皇室冬蔭公皆令我心動。尤其前者可選濃湯底,據說仿似牛肉麵的。但剎那間泛起一念頭,何不還原基本步,重溫最原味的清湯丶沙爹鴛鴦鍋 呢?清湯內有餡料,馬蹄、粟米及紹菜同熬,令湯頭不寡清甜;沙爹湯頭就是醇厚的沙爹。基本的調味料,貴精不貴多,麻油、紅辣椒丶青蔥丶芫茜丶生蒜及炸蒜,全部必加。火鍋少不了肥牛,我們選了本地手切肉眼邊位。脂肪分佈平均,見外表已知新鮮肥美。薄切中有多少厚度,灼六、七秒將熟的質感最合心意,嫩中有嚼勁。四式餃子盛,全部新鮮自製,可以一次品嚐雲呑、水餃丶韮菜餃及魚皮餃。最欣賞鳳城水餃,饀料除了有豬肉及蝦外,還加進木耳,口感非常爽脆,與別不同。第二位是鮮蝦雲呑 ,皮薄軟滑,餡料脹卜足料,慷慨地每只雲呑竟然大蝦小蝦各一粒,爽甜美味。新鮮皇帝菜 鮮嫩對辦。最後是贈送的芒果糯米糍,略為解冰了,軟硬度剛好。別忘記在Facebook 打咭,可享免費飲料,我們
