銅鑼灣有間專食山西刀削麵,平時都好鍾意食有質感嘅麵條,所以行街經過一於試吓,坐得近廚房,見到師傅接咗訂單就削麵條。平時多數食湯,今次叫熱拌刀削麵又是另一種風味,一夾起刀削麵屬煙韌與軟糯之間,口感一流,好鐘意咁煙韌嘅麵麵條,經過一番攪拌,四川擔擔醬同碗底仲有豉油同醋,同青瓜花生黏滿麵條上,帶微微熱度,豬頸肉好食在邊位有少許焦香感,豬軟骨既骨係比較硬身嗰隻,好有質感,牛筋入味之餘夠煙韌,而牛腩則軟淋,絕對係必點。
