價錢高一般拉麵鋪,有什麽吸引人之處呢?尖沙咀店重点主題豚鴨沾麵,在這裡變為常見麵款,取而代之皇牌推介是極上蟹皇沾麵,整隻炸軟殼蟹再加上蟹羔蟹肉伴碟,自家製的沾麵麵條放在筲箕內,份量十足,半熟蛋一看蛋芯橙紅相信是取材自日本,沾汁滾熱猶如橙黃溶熱的岩漿,賣相極好。

品嚐一下沾汁,味道是濃厚的蟹肉蟹黄味道,但質感水狀似湯,冰冷的粗沾麵麵條放入沾汁內卻掛不到一點兒的汁,麵條是不錯,厚厚的有咬感有彈性,但沾不到丁点兒的汁,有點失望。

另外由於新開業,炸軟殼蟹似是新學徒擔當,花了很長時間才炸好,我不知四五名食客同時叫要等多久時間才能吃。拉麵處理反而較沾麵佔優,但拉麵麵條不及沾麵麵條好吃。
吃罷沾麵,意猶未盡叫了一碗醬油拉麵,感覺清淡自然,但醬油味又不太特出,麵條無味無特色似乎叫鹽味拉麵較好,這裡用的盬粒屬於沖繩粟盬,咸度適中自然。

由於新開張,員工特別多,眼見很多職員是生手,同時亦有很多經理/主任駐場,生手職員在經理/主任監視下變得工作戰戰競競,加上服務仍未夠貼心,座位與座位之間距離很近,加上疫情間隔很多,很容易忽略客人,我坐了五分鐘才有人送上室温水,要舉手才可叫單。另外你有隨身背囊手袋是沒有籃子或空格給你擺放,服務有點落差,加上是港式管理方式,新開張可待磨練純熟,建議可在一或兩個月後才試食。
