。活動三點半先開始,每位食客一到,服務生隨即送上水一杯,menu一份,酒店及餐廳職員亦不忘派咭片,為餐廳作出簡介,態度誠懇,服務貼身!

"Distinguished Patron"($120):此款雞尾酒以Tanqueray No. 10 Gin、新鮮raspberry、自家製糖漿及蛋白調製而成。見到小肥有少少驚嚇o既反應,哥哥仔即刻解釋話蛋白係經過處理,絕對衛生,叫大家可以放心飲用!粉紅色o既"Distinguished Patron"酒味唔係太濃,味道帶甜易入口,好refreshing


約三時四十分,駐店經理Richard正式為試食活動揭開序幕,介紹JW萬豪酒店旗下新餐廳Flint Grill & Bar o既架構、概念、設計、主要人物、食材選購等。講到食材,Richard話因餐廳著重食材新鮮,好多菜式都未必會列明喺餐牌上,要即日睇吓廚房搜羅到啲乜,先由服務生為客人推介。此外,餐廳逢星期一至五提供午市優惠套餐,週末則有brunch buffet,頗為多元化。簡介完畢,Richard順勢交棒比酒吧負責人,JW萬豪酒店星級調酒師Bryson Rivera即席表現調製火焰雞尾酒"Feint Obscurity"。"Feint Obscurity"($140):"Feint Obscurity"雞尾酒以Angostura Mist、糖、提子乾、Ron Zacapa 23 Rum及煙燒cinnamon wood chips所調製。小肥只係喺酒杯旁聞一聞都已經有少少暈,心諗雞尾酒應該幾"kang",哈哈,當然係冇膽試啦


雞尾酒示範完,餐廳已經安排好幾款小食喺雲石枱上比大家送酒。三十多人圍住張吧枱,為免增加混亂,排喺龍尾o既XO仔最終喺枱邊隨便攞咗兩件小食就坐埋一邊慢慢欣賞:
酒吧小食之Cheese & Iberico Ham Croquettes, Apple Compote, Romesco Dip($70):芝士球熱辣辣,香脆鬆軟,帶咸得黎又唔會過火,點上蘋果味o既醬汁,好味


酒吧小食之Foie Gras, Potted Terrine, Walnut Bread and Fig Jam($160):(小肥手腳慢,所以未有機會品嚐

酒吧小食之Crostini of Iberian Ham, Smoked Piquillos & Cantabrian Anchovy($80):火腿出乎意料地一啲都唔咸,而且肉味香濃,配上早前o既"Distinguished Patron"雞尾酒簡直係一流


我地四點鐘左右離開酒吧區,踏入Sommelier’s Table,由品酒師Kevin講解佢工作範圍,即為客人揀選餐酒及wine and food matching。Kevin揀酒不離品酒三步曲之「睇、聞、舌」:「睇」係指酒o既色澤,「聞」係指酒o既氣味,「舌」係指酒o既味道;當中以「聞」為主。

聽完一段酒經,進入Chef’s Table及Open Kitchen,大家已經可以見到德藉主廚Sven喺廚房中央帶領住其烹飪團隊忙碌地準備各式美饌比大家試食,更擺放好全套菜式喺長枱度供食評們拍攝。

因XO仔略懂德文(嘻嘻,其實只限打招呼
),所以主動跟Sven寒暄,得知佢喺家鄉德國米芝蓮二星及三星食府工作過,較早前亦喺廣州一家酒店逗留過兩年。Sven愛用新鮮食材炮製出烤物,以提升原材料最真實o既味道,不過佢同時亦喜愛鑽研調味汁,更極力推介XO仔要細嚐主菜Rib Eye之秘汁。

踏正四點半,三十多位食家終於埋哂位,分開每四人一組進行試食。Flint非常大方,除咗無限量供應紅、白酒之外,每枱o既食物都係full portion,即足一份
。(大家請放心,XO仔絕對唔會因酒店及餐廳o既慷慨而道出失實之評價。)

頭兩道為沙律頭盤,XO仔最怕食菜,週末更加被小弟視為「冇菜日」,所以雖則蔬菜外貌光亮新鮮,XO最終都只係蜻蜓點水式試咗一口而已

頭盤之Burrata - Heirloom Tomato, Wild Arugula($160):蕃茄唔酸,質感爽脆濕潤。

頭盤之Organic Beets - Crumbled Goat Cheese "Crottin de Chavignol", Mache Salad, Xeres Dressing($130):Goat cheese味道出名濃,而且勁到唔係個個人都頂得順,小肥自問無咁o既能耐同膽識去試,同桌o既食家們對依味沙律亦有不同評語。

試完沙律,Flint先送上兩款是日海鮮冷盤,再安排五道主菜及四種配菜供食評們續一品嚐:
海鮮之Crudos - Chef's Seasonal Creation of the Evening - Tuna Tartare($180起):精選魚生之吞拿魚他他,面層為味道最濃烈o既三文魚子及味道較淡o既菜絲,底層為香滑o既牛油果,主菜吞拿魚就夾喺中間,側旁伴上香脆o既Flaxseed多士;此道菜式無論係視覺上、口感上、定係味覺上都好有層次。因為各種食材o既味道同質感都較為極端,即一係太咸、一係太淡、一係太腍等,師傅依個配搭剛好將其極端之處中和,讚

海鮮之House-Cured Salmon - Honey-Mustard Dressing, Flaxseed Toast($150):Flint自家醃製o既三文魚外表平平無奇,但入口就知道佢唔係普通o既煙三文魚!每片三文魚都好薄,食家可自行加上面層o既黑魚子醬及伴碟o既蜜糖芥辣調味汁,再將三文魚卷起或切成細細片黎食。自製三文魚卷感覺上應該未有經煙燻過,味道鮮甜幼嫩,非常清新醒神,此道廚師食客互動菜式簡單得黎好出色

經典美食之Boston Lobster Baked Thermidor Style($380):芝士焗龍蝦係一味比較傳統o既西式主菜,好多地方都會食得到,不過大部份都唔多合格,因煮龍蝦其實好考功夫。小肥唔係刷鞋,不過Flint個芝士焗龍蝦真係好有水準:第一,龍蝦肉做得非常爽脆,一啲都唔嚡、唔老

烤製菜式之Nebraska 63 Dry-Aged on the Bone Rib-Eye($580):平時食西餐好少會揀牛扒,因個人比較鍾意食中式或韓式醃製過嗰啲牛肉菜式。Flint依道肉眼扒熟medium rare,肉味濃郁,肉質唔嚡又夠肉汁,配上大廚Sven極力推介o既秘汁

烤製菜式之Six Point Berkshire Black Pork Chop - Fennel Seed Crusted, Apple Compote($280):醃製過o既黑豚扒英國進口,層肥膏幾實幾犀利,不過如果唔連肥食又會有少少嚡,入口時嗰份矛盾感就好似食東坡肉或者係五花腩咁,想食但又怕肥


烤製菜式之Seafood Grill - Catch of the Day, 1/2 Boston Lobster, Red King Prawn, Pot of Mussels($380):多種健康理由所限制下,烤海鮮拼盤中小肥只係食咗鮮甜香滑幼嫩o既sea bass。眼見同桌o既食家都能夠差不多食哂成盤,估計其餘海鮮都應該做得好唔錯。

精選配菜之Fries - Rock Salt, Rosemary & Old Bay Seasoning($60):薯條夠幼,又夠野味,如果可以少啲油,效果應該會更佳。

精選配菜之Forest Mushrooms - Garlic Butter & Parsley($60):以香蒜牛油煮製o既炒雜菇香濃入味,配上牛扒同黑豚扒食都好恰當。

精選配菜之Creamed Asparagus – Hollandaise($80):(XO仔食蘆筍會骨痛,嘻嘻,又多個藉口食少樣蔬菜

淨係睇小肥上述o既描寫,大家都可以想像到我地食完五味主菜時有幾飽。無奈因餐廳要準六時正開門做生意,所以未能給予食客足夠時間去消化食物
,就趕住上哂四款甜品。講真自己真係食到攬住個肚,不過小肥終於可以証實食甜品原來真係有另一個胃架


甜品之Smore - Soft Chocolate Tart, Marshmallow, Graham Cracker Ice-Cream($80):記得細細個去美國露營時曾經食過,當時導師解說話"Smore"係美國文化之一,露營bonfire時間之必吃甜品,仲話相傳"Smore"係"some more" o既縮寫wor
。雖然主材都不離朱古力、燒棉花糖、Graham Cracker,不過Flint演繹o既Smore甜品比起我多年前食過o既Smore三文治精密而又美味得多
,最精彩就係燒棉花糖底下嗰層夾住Graham Cracker o既朱古力撻,鬆化香脆又唔會過甜,配上清香軟滑o既Graham Cracker雪糕同薄脆簡直係頂瓜瓜!

甜品之Key Lime Cheesecake w/ Seasonal Berries, Candied Ginger Ice-Cream($80):芝士蛋糕好似我以前喺美國食過嗰啲咁甜,對香港人黎講會太甜,不過如果連同蛋糕面o既忌廉同伴碟o既薑味雪糕一齊食就可以緩和啲甜味,小肥亦可以接受。相反地,對於外國人黎講,尤其係美國人,甜味指數應該只屬啱啱好。

甜品之Banana Cream Trifle($80):食依個香蕉甜品時感覺就好似食緊件香蕉味o既Tiramisu咁,有酒、有忌廉、又有蛋糕,口感同味道都好有層次,如果稍為冇咁甜就更加好。

甜品之Chocolate Soufflé with Hazelnut Sauce($90):每當食得太飽時,接住入口o既食物o既美味程度都會大幅下降!好在最後上o既一味甜品係食落猶如空氣o既梳乎里,皮脆鬆軟,朱古力味濃得黎又唔係好甜,加上香滑o既榛子醬,成功為當日試食活動劃上完美o既句號


置身於五星級大酒店o既Flint Grill & Bar,環境新潮得黎又不失優雅舒適衛生,無論係商務聚會、一家大小、情侶一雙、三五知己、亦或係同事成群都同樣適宜。酒店級o既服務當中,以高級職員o既細心體貼最為突出,佢地會不時問及食家們o既意見及感想,態度認真且誠懇。調酒師、品酒師、大廚們都毫無架子,友善好客,其調酒及廚藝表演亦非常精湛細膩。餐廳選用高質o既新鮮食材,加上廚師用心研製菜式醬汁,無論係雞尾酒,頭盤、主菜、定係甜品,各式各樣o既食物都有奇獨特之處,最緊要係餸菜美味可口,有得免費品酒嚐美饌o既XO仔覺得今次驚喜試食體驗絕對超值
