呢間位於銅鑼灣嘅日本餐廳主打創意刺身,今次嚟食omakase,我同友人揀咗楓 $850/1位。一坐低,店員就遞上餐廳自製嘅炸蕃薯片,平時只會喺泰式餐廳一坐低有蝦片食,喺日式餐廳有咁嘅小食真係第一次😆,蕃薯片好薄身,炸得香脆。前菜 胡麻醬菠菜雞絲、特製甜蛋、南瓜,甜蛋好似糕點咁,佢係分開咗蛋白同蛋黃咁處理,食起上嚟有兩重味道。旬の刺身2点 刺身擺盤好精美,好似藝術品咁,刺身有鱆紅魚同埋海膽拖羅,鱆紅魚點上酸汁嚟食,味道清爽,海膽拖羅就又肥美又creamy,入口即溶,兩種刺身截然不同,係好有趣嘅配搭。伴碟嘅花草都有來頭,分別係日本小黃菊同芬蘭香草。焼き物 銀鱈魚西京燒,魚煎得香嫩,西京燒調味適中,個人鍾意再甜多少少。旬の寿司6貫 鮫鰈魚油份較重,食落口感煙韌,配上Wasabi漬食用,提升鮮味。醬油漬赤身完全無筋,魚味濃郁。鮫鰈魚邊,炙燒過後逼出油份,係另一款同樣好食嘅做法。用赤醋製成嘅醋漬鯖魚,配上白昆布,肉質結實,重魚香。熟成拖羅係呢到係招牌,拖羅顧然重油香,經熟成處理後連魚香都兼顧埋,贏哂。海膽,非常非常creamy,而且好鮮,紫菜又夠脆。海鮮焗蛋,佢口感係好似剛剛蒸好喺馬粒糕咁,但其
