Long time no Japanese ramen. Given the cold winter, it was ramen season again. My ramen partner told me there was a new ramen bar in Sham Shui Po and asked me to try. 丸京拉麵(叉燒3枚, 真叉燒3枚, 蛋, 筍)清湯 $100

As it was our first visit, we decided to both try out their signature ramen but with different broths. The presentation was so unbeatable with 6 slices of char siu nicely laid out topped by a soft boiled egg cut into halves, 3 pieces of bamboo shoots and loads of chopped spring onion with some broth. The server kindly told us that the 3 slices of pinker char siu were 真叉燒 which were slow-cooked and so were more tender. Indeed they were so tender yet not overly fatty and super rich in pork flavour. The other 3 slices were also quite tender and tasted very good of the grilled flavour. Look at the edges of the char siu and you would be able to tell! The soft boiled egg was quite well done with slightly sweet and soft egg yolk. This 清湯 broth was not oily as it was basically soy sauce.  We enhanced the flavour by adding lots of mashed garlic served on the table so that it was slightly spicy and smelt pretty good.

The ramen was covered by the char siu underneath. It was those thin type and was reasonably al dente. Portion was quite big.

丸京拉麵(叉燒3枚, 真叉燒3枚, 蛋, 筍)黑蒜油湯 $100+$12

This broth was black garlic oil and we had to top up by $12. The black garlic oil broth was quite tasty as it smelt very good. We were told that it was very similar to 濃湯. The other two broths available were 濃湯 and 醬油蝦湯. I personally liked this black garlic oil broth even more than clear broth.

香蔥沙律炸雞 $42

There were 2 types of snacks available, i.e. pan-fried dumplings and deep-fried chicken. We decided to order their 香蔥沙律炸雞 to share. Definitely cooking only after order as we saw the server putting batter on the seasoned chicken and then deep frying them. There were 6 big pieces. The batter was appropriately thick and crispy. The chicken flesh inside was very juicy and tender and also well seasoned. They added some 七味粉, salad dressing and chopped spring onion so that they tasted slightly spicy and were very smooth. We finished them in no time.

The drinks were 100% made in Japan. A great end to the meal. If you don't need to order drinks, they offered sufficiently iced water to go with the hot ramen.

Quite a fulfilling lunch at a comfortable and quiet environment. Service was very efficient and staff was very helpful. Definitely worth trying, especially the delicious char siu.
