喺中環都食過好多唔同菜式,其中呢棟大廈集合好多餐廳,既有韓國菜,又有西餐、日本菜等,最近留意到呢家頗新嘅川菜館。選擇左平日晚上黎到,估唔到餐廳喺冇乜媒體宣傳底下,都已經有咁多人認知,我地信心大增,想必一定係如食評所言,很有水準餐廳位置唔算好多,有心食記得預約啊,以免撲空或者要等候嘛。餐廳位於M88嘅19樓,名字很重要,如何令人一睇過就記住,店名「1935壹玖叄伍」就做到,原來店主嘅外婆煮川菜很拿手,所以店名取自佢嘅出生年份,很有意思。餐廳裝潢很用心新穎,飯後同店主傾幾句,得知餐廳一邊設計成火車卡座、包廂感覺,細緻到連燈光都有考量。有別於傳統川菜館,仲設吧枱,有調酒師駐場。喺等候期間我地都點左幾杯cocktail消磨時間,新舊交替,傳統菜做出新意嘅配搭。cocktail部分都很有驚喜,有好幾款都用上中國酒作基調,例如肇慶、竹葉青、養命酒等。Alcea Rosea $110花雕酒、冧酒加上啲莓果味調出,面頭仲放左粒焦糖草莓,香甜清新。果味較重,適合女士Carnation Says $120以氈酒、梅酒、sake作基調,柚子中和酒味,較清新、易入口。賣相很美,大杯中冰磚及一朵康乃馨,好似件藝

cocktail部分都很有驚喜,有好幾款都用上中國酒作基調,例如肇慶、竹葉青、養命酒等。

餐牌選擇豐富,有前菜、湯、海鮮、肉、蔬菜、飯麵、甜品等,雖然位處中環,但價格尚算貼地,而且好多菜式都細心設計過,值回票價。

加入蒜蓉、意大利醋拌青瓜、木耳,酸度適中,唔會太重口味,蒜香濃郁,青瓜爽脆,作為開胃菜合格以上

手切跳神肉 $85
白肉切到好薄好薄,刀工一流,完全唔油膩,配合醬料唔會好濃味,帶點點香辣,拌上滑溜嘅粉皮,亦係很值得一試嘅開胃菜。
令我為等候而產生嘅不耐煩後悔,幸好冇錯過咁高質素嘅美食

鐘意食齋嘅朋友唔會陌生,一般素鵝比較薄啲,但呢度嘅素鵝厚啲,層層腐竹,做到軟熟酥脆,名副其實「香酥軟枕」,係我目前食過最好食嘅素鵝,十分出色

酸菜唔搶風頭,又唔會好似平時食嘅酸菜魚咁重口味。
以薯粉墊底,滲入湯汁,好入味;我對於魚湯味道很滿意,飲左幾碗。

是日燉湯 $80(限量)
每日都唔同嘅燉湯,店員話廚師考慮到過完新年大家都食得油膩煎炸野多,所以選用無花果雪梨蘋果燉豬𦟌
好似住家湯般,完全冇味精感,落足料煲,十分清潤,一人份量,啱哂食得多油膩野嘅我

講得黃金,當然係用鹹蛋,一上枱已經聞到好香,急不及待要放入口。軟殼蟹酥脆,份量都幾多,蛋黃足夠包裹軟殼蟹,很平均,仲保留到鹹蛋嘅口感,又唔會太鹹。驚豔之際,店員話鹹蛋係人手切碎,咁花功夫,難怪個個lamlam脷

擺盤吸睛,急忙即刻相機多角度食先,將娃娃菜都好似雕左花一樣,上枱時就好似未開嘅花,由店員幫我地剪開,就好似開花嘅過程,很有心思。娃娃菜嘅湯都可以飲埋,清清地中和番剛才食過嘅辛辣

鮮果四川冰粉 $70
外形有啲似水信玄餅嘅冰粉,賣相滿分,透明嘅冰粉中包裹住雕左花嘅草莓,很欣賞餐廳為每道菜花嘅功夫,同流水作業嘅連鎖餐廳完全唔同。
伴上每山楂、提子乾,蜜瓜粒等,仲有自家製香茅汁。味道清新,賣相精美

整體而言,餐廳環境很有格調,同三五知己黎傾計食飯得,呢度亦有數間包房,低至四至五人都ok,人多嘅生日聚會、商務聚餐都係一流。
既有品味,食物亦相當有水準,強調不加味精,服務方面亦係加分,店員很熟悉每道菜嘅用料、煮法,值得推薦
