星期六,天陰翳焗。筆者與太座於英倫放了一個星期悠閒假期,給繁忙嘅2009上半年充了電,好迎接下半年嘅挑戰。下機翌日,相約一大班友好聚餐,太座則因jet lag而「倦勤」。大家同屬三十世代,事業均初見成就,飯局嘅地點不能馬虎。所以千揀萬揀,都係揀了穩陣不怠嘅龍頭食肆。講到食官府菜嘅龍頭,也不得不提位於帝苑酒店嘅「東來順」。第一次光顧此店大約在兩年前嘅秋天,被其得獎菜式「鶴湖蟹影」及「松子桂魚」所吸引。今次故地重遊,一不點「鶴湖蟹影」(因為不合時令,沒有用大閘蟹做餡),二沒有叫涮羊肉(因友人中部份受不了羊羶味),兩大名菜皆沒有列入菜單。不過,出色嘅餸菜還真不少,一行九人,點了三味冷盤、六道熱葷及五種甜品,還加了一支紅酒點綴。冷盤水晶羊肉 – 沒有涮羊肉,改以此冷盤滿足一下好羊嘅友人。外貌近似「鎮江肴肉」,以羊肉絲加上用大菜糕銷起嘅鹵汁呈上。稱得上水晶,卻不至於晶瑩剔透。不過入口已能感受到淡淡嘅羊味正慢慢滲出,好羊之人會覺得滿意。相比起熱辣辣嘅涮羊肉,冷凍食法又別有一番滋味。以個人口味而言,筆者還是覺得熱食更合心意;雞絲粉皮 – 一款各大京川滬菜館都有供應嘅家常冷盤,以雞絲、粉皮佐以麻醬上菜

冷盤
水晶羊肉 – 沒有涮羊肉,改以此冷盤滿足一下好羊嘅友人。外貌近似「鎮江肴肉」,以羊肉絲加上用大菜糕銷起嘅鹵汁呈上。稱得上水晶,卻不至於晶瑩剔透。不過入口已能感受到淡淡嘅羊味正慢慢滲出,好羊之人會覺得滿意。相比起熱辣辣嘅涮羊肉,冷凍食法又別有一番滋味。以個人口味而言,筆者還是覺得熱食更合心意;雞絲粉皮 – 一款各大京川滬菜館都有供應嘅家常冷盤,以雞絲、粉皮佐以麻醬上菜。這冷盤嘅精要在於麻醬嘅調配及粉皮是否夠彈牙。可能筆者係食水尾關係,碟上嘅麻醬所餘無幾,察覺唔到麻醬嘅香濃味,而且粉皮口感比較散,以東來順嘅大名,可謂水準以下;四喜烤夫 – 是一味上海菜。傳統上「四喜」包括鮮冬筍、香菇、木耳和金針,「烤夫」則是蒸過嘅麵筋。此味雖是上海菜,但醬油及糖嘅控制功夫到家,唔會出現過鹹或過甜嘅情況。

熱葷
松子桂魚 – 記得第一次嚟這裡食此菜嘅時候,曾驚歎廚師下松子毫不吝嗇,是晚再次品嚐此菜,廚師較前吝嗇了,不過酸甜汁嘅調較依然是十分出色,不太酸亦不太甜,加上炸得金黃、連骨也炸得酥軟嘅桂魚塊,令人食慾大振。以此菜論,其水準在本地可謂數一數二了;干扁四季豆 – 是一味客家菜,故雖然係四季豆,都充分體現了客家菜嘅鹹、肥及香。這裡嘅四季豆炒得不太香,可是亦唔會太鹹或太油膩,算是比較健康的了。筆者想做得比東來順出色嘅干扁四季豆,為數應不少;上湯浸莧菜 – 雖則是一道較為清淡嘅菜式,但偶一不慎,一則上湯味太濃(即是以味精湯取代雞湯),二則莧菜煮得鞋烚烚。猶幸這裡對簡單菜式嘅處理也不馬虎了事;北京片皮鴨(兩食) – 烤鴨嘅水準已相當之高,鴨肉嫩滑充滿油香之餘,鴨肉本身並無太多多餘嘅脂肪。配以青瓜絲、香蔥及甜醬汁,既清新又能享受鴨肉香。唯一不足之處是用嚟包裹鴨皮嘅餅皮被水氣蒸得有點過軟,稍為乾身一點效果會更好。第二食以鴨崧配生菜,鴨肉鬆軟嫩滑,做成生菜包,味道都唔錯喎;三鮮鍋貼 – 分別用蝦、豬及羊做餡料。鍋貼被餡料塞得滿滿的,材料十足。外皮薄煎得帶少少香脆,內裡肉質鮮美,肉汁豐富,但又唔太油膩,水準令人滿意;上海炒年糕 – 估唔到在京菜館也能食得到這麼多其他菜系嘅菜式。這道炒年糕,筆者認為炒得不錯,但鄰座嘅E律師認為太鹹。可能大家口味不同,又或者師傅炒得唔夠均勻,至於實際是那種原因,則無從稽考;

甜品
流沙金球 – 擁有令在座數位女士為之心動嘅奶黃作餡料,係煎堆及奶黃飽嘅混合體。筆者雖沒有機會品嚐,但從各位女士嘅面部滿足嘅表情可略知一二
玫瑰荔枝榚 – 相比起另一款南瓜菊花糕嘅清香及晶瑩剔透,似乎玫瑰荔枝糕較為遜色。一則上層啫哩部分比較混濁,影響觀感;二則入口並未能感受到玫瑰花嘅馥郁香氣,取而代之反而係斧鑿痕跡甚深嘅人工甜味,係咁多款甜品之中最為失色;高力豆沙 – 食京菜甜品嘅指定動作。外觀是對辦的,但筆者並冇親嚐之,故不作評論;擂沙湯圓/驢打滾 – 材料、質感類似,所以合併一齊講。口感煙韌,無論係芝麻餡或紅豆餡,甜味雖算不上激烈燦爛,但恰到好處,含蓄內歛。如果樣樣餸嘅味道都弄得五光十色,實教人/味蕾太沉重。以甜味適中嘅甜品作結,才能為盛宴劃上完美句讀。

服務一環,仍與第一次光顧時差不多,沒有可見嘅進步,可能設席於廂座,服務員未能經常以第一時間去招呼我們,替茶壺添水之後亦沒有跟進替客人添水/茶。以此店嘅質素,這樣嘅服務顯然有所不及。


原價差不多二千五百元嘅晚膳,用了openrice八五折優惠劵,折實二千二百元,平均每人二百四十五元,兼且有三小時免費泊車優惠。最開心嘅係各朋友飯後都一致覺得是次晚飯整體出色,不枉筆者嘅推介。
