To encourage eatery outlets to reduce food waste at source together with customers through offering portioned meals and adopting food waste reduction measures, the Environmental Protection Department has launched the “Food Wise Eateries” Scheme. Participants will be awarded with a Food Wise Eateries (FWE) accreditation status if they comply with the assessment criteria and will be granted with the FWE Logo and Stickers for displaying in the premises and their promotion for public identification. Applications are accepted all year round and are FREE of charge.

To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 首道菜是 麻醬雞絲撈起 ($108), 正是巨大昇級版的雞絲粉皮,除了份量加大,還增加了蘿蔔及紅椰菜,口感更加豐富美味;又可以佔撈起的喜慶意頭,不錯不錯。

同時上場還有 揚州龍青瓜 ($88),此菜絕對是大廚深厚刀功的展現,仿如盤龍造型的龍青瓜可拉至約一米長,食前會由侍者幫忙剪開以便分享。青瓜加了柚子青檸醬汁調味,所以草青味不算太強,我也能接受得來;口味清新挺推介多人分享的!

接著是令人嘩然的 東海龍皇 ($780),一款40年前北京樓的經典菜色,這次強勢回歸並以全新演繹登場!材料包括大蝦、螺片、帶子及窩筍,炒香後配上薯蓉及栩栩如生的紅蘿蔔龍形雕刻,正是色香味俱全之作。

還有幾乎每次上北京樓都會點的 糖醋桂花魚 ($298),魚肉集酥脆甘香與肉嫩細滑於一身,配以醒胃可口的醬汁,以及生動活潑的造型,自是討人喜愛的。

但對北京樓最深的情意結還是 烤北京填鴨 ($460隻/$240半隻),正好北京填鴨的英文也是 Peking Duck,更與店名相呼應。這裡選用油脂分量少的上等北京嫩鴨,連皮吃也不會太肥太油;大廳一般由開放式廚房新鮮片起上檯,就坐廂房就可以享用席前片鴨服務。

這晚我們沒點二食,純粹品嚐鴨皮/連皮帶肉的烤鴨,以及海鮮醬、青瓜、京蔥及麼麼皮的傳統組合。這裡的鴨子本來脂肪就不算多,肉又香嫩,個人認為比上週另一間烤鴨名店更好吃;而同上的麼麼皮又相當薄身,吃來沒那麼飽膩,所以忍不住連吞4大件才滿足收手!

吃完烤鴨,來個 炒田園菜 ($118) 平衡一下吧:四蔬包括萵筍片、紫椰菜、蓮藕及南瓜,色彩繽紛、悅目可口,其中最愛漂亮花型的蓮藕片,清鮮爽嫩美味兼有之,又是吃了好多的!

原來,外邊有即席拉麵表演;別看師傅年紀輕輕,卻是相當熟架部,幾下功夫就將麵糰拉成長條狀,幾分鐘後,又長又細的拉麵就成型了(詳情可見 Facebook 影片)!不過受到強勁音樂的影響,現在每次吃拉麵都會想起黃飛鴻啦....

接著是非常有看頭的 富貴雞 ($580),單是唯肖唯妙的母雞連雞蛋的麵包造型,已經令人叫絕,而上桌後還會淋上玫瑰露,再點火打造火焰富貴雞的效果,太呃 like 了吧?

而打開富貴雞,則是以荷葉包裹釀有鮑絲、螺片、冬菇等食材的黃油雞,香氣四溢、汁多味鮮,十分吸引,吃完很飽了... 之不過,先前的拉麵那麼吸引,怎也得來份簡單而美味的 北京炒拉麵 ($118) 才算滿足。

去到甜品環節,也是驚喜連連:可愛逼真的 青蘋果酥 ($45/3件) 頗有酥皮月餅的味道,只是那新鮮酥皮更熱脆可口,中間餡料果真有著青蘋果肉,清新怡人而不膩,好吃極了!

還有味道與賣相一樣美的 荸薺餅 ($72/6件);荸薺,又名馬蹄,剁成細蓉再塞進煎堆內,那份清香、水嫩及爽脆,與熱騰騰又香口的芝麻脆皮煎堆形成強烈又美好的衝突,超喜愛的~
