This was truly a meal of premium ingredients and refined workmanship. Starting first off with their sashimis. Everything was of such amazing quality that the chef kept the seasoning to a minimum to bring out the unique flavour of each and every type of fish. My favourite was the 🐚Japanese whelk (Tsubugai 日本響螺), it’s coolness, crunchy texture and umami flavour left a lasting impression👍🏻. My previous experience with Japanese whelk has always been very mediocre as most turns out rather blend. This was a completely different story and was so good that I had already eaten one piece before I remembered to take a picture 😂

Another highlight was the 🐟Bluefin tuna toro 野生藍鰭吞拿. That sophisticated umami flavour coupled with the iconic melt-in-your-mouth effect is enough to leave a lasting impression😉

On a side note, I love their Yuzu daikon 😂
Moving on to the sushi! When it comes to sushi, not only does the chef have to master the preparation of the fish, the texture and seasoning of the rice as well as the fish-to-rice ratio must be perfect too! And needless to say, the chef absolutely nailed it!
Truth be told, this is probably the fanciest Japanese resto I have ever been to 😍 so I am very much a noob when it comes to fancy omakase🙈. I must say though, I do love how each piece of sushi comes as a full package, all ready to be eaten when served. I don’t have to worry about whether I am ruining the sushi by adding too much or, on the contrary, too little soy sauce or wasabi.

The sea urchin was definitely the highlight! The top layer was Shirahige uni (白海膽)and the bottom layer was Bafun uni (馬糞海膽). That combination was sensational, so incredibly smooth and sweet, leaving behind a lasting umami flavour😍 And yes I love how I had more uni in my mouth than rice!

I also particularly enjoyed their seared sushi, including the seared 梳子魚 which looked super pretty and the seared 赤鯥魚, both were really flavourful with a tender texture that melted in your mouth.

Another highlight was the 石垣貝 which could still move when served and the chef gave it a quick slap which made it curled up abruptly 😍 It also had a super unique cool crunchy texture.

To be honest, there’s so much in this one meal and such a blessing for the palette that it’s hard to put everything in words.
We finished off with a warm cozy clam soup. There was also a couple pieces of pearly white Japanese sweet corn which was super crispy and sweet, very refreshing for the palette👍🏻
For dessert, I opted for the fruit option and it was definitely the right decision. The Japanese muskmelon was so sweet and juicy!! And just look at that beautiful orange colour😍 Reminded me of the ones Dr Kambara brings along with him when he asks the hospital to pay Doctor Daimon’s bills in Doctor X😂 Comment below if you love Doctor X too😍
