Started with a glass of Silver Fern wine which was recommended to go with the Spanish Red Prawn.
The Spanish Red Prawn is natrually flavourful so all they put on it was sake and sesame oil and then blistered it with a huge flame torch which reminded me of ghost busters!!
The crispy rice puffs are decorative as well as functional because it absorbs the prawn head matter so that you can appreciate every bit of the prawn.Next was my favourite creamy burrata with refreshing heirloom tomatoes, the portion size was satisfying.
Finished with ravioli and I loved it.Each one with filled with springy prawns topped with fennel foam complimented by rich uni cream.
Will come again and visit my fave chef again!
