Testina is a restaurant that I would revisit from time to time. I even had their anniversary marked into my calendar so I wouldn’t miss their annual celebratory event! It was rather unfortunate for the restaurant (fortunate for us though 😉) that their anniversary this year fell on Nin 30 (年30), so it was very quiet as compared to their 1st anniversary last year, when Chef Diego Rossi of Trippa Milano specifically flew in for the event 🥹 With that said, Chef Xodo continued to pull out all the st

Testina is a restaurant that I would revisit from time to time. I even had their anniversary marked into my calendar so I wouldn’t miss their annual celebratory event! It was rather unfortunate for the restaurant (fortunate for us though 😉) that their anniversary this year fell on Nin 30 (年30), so it was very quiet as compared to their 1st anniversary last year, when Chef Diego Rossi of Trippa Milano specifically flew in for the event 🥹 With that said, Chef Xodo continued to pull out all the stops this year, showcasing all of Testina’s signature dishes including my favourites Homemade Pappardelle with Chicken Offal Ragù and Pig's Head & Salsa Verde. The pig head was done to perfection - a gelatinous collagen mass with a delicate crisp on the outside. And to make the meal even more complete, the dessert of the evening was my favourite Hazelnut Cake & Piedmont Hazelnut Zabaione. Delectable as always.
