Dry Refrigerated Cupcakes

I had originally planned on ordering 500 cupcakes. When I got to the shop, I purchased one to make sure the quality was okay. They all looked beautiful, but the taste & texture just isn’t there. In the shop (a stall in the basement of a shopping center), they are kept refrigerated to a point where the cake turns hard and dry.
