Bisque is a classy lobster and champagne fine dining restaurant located just at the bottom hill of Lan Kwai Fong. The dining area has 4 cozy round tailor made wooden table with a super chilled champagne bucket. On the other side, you may enjoy a few drinks on the terrace of building, overlooking the buzzing Lan Kwai Fong, the heart of this prosperous beautiful city, Hong Kong. A new cocktail menu has recently been in place to pair with the lobsters and other seafood items on the food menu.

An egg white based drink made with G-vine Gin, St Germain, Apple Sour, Grape Juice. the sweetness and sourness perfectly balanced with each other with a slight bitterness from the bitter on the foam top.

Bisque stopped serving raw oysters but these baked freshly shucked oysters were just as good. We started with this sweeter and creamier oysters topped with Philippine mango, tomato concassé, mixed peppers, purple onions and fresh cilantro topped with a Parmesan white wine béchamel. The topping was really cheesy and creamy, yet not too overpowering.

Then some more Atlantic oysters topped with original recipe of fresh herbs, parsley and garlic butter, baked until golden. The sauce in this oyster is a bit sour like the Italian dressing, with a strong mixed herb flavour. The fresh oysters were plumped and juicy, not a bad way to start our meal with!

The signature dish from the restaurant prepared by using only lobster head, meat and shell and it takes 2 days to prepare with 9 hours cooking with some fresh cream. Then using a big blender imported from Spain to blend 3 times until very smooth before sifting until very fine. Finish with a little bit extra cream at the end. The very rich and heavy soup was serves with a piece of buttery toasted bread, poached lobster claws, and creme fraiche.

The al dente linguine pasta served with black truffle, fresh Italian parsley and sugar peas in a heavy, buttery and creamy sauce. A few truffle was being used including some grind truffle, truffle pieces and some truffle oil drizzled all over before serving. The serving size was pretty generous because the dishes at Bisque is meant for sharing.

Brunswick lobster tasted slightly different from Boston lobsters with a softer texture and a lighter sea water taste in my opinion. You may choose either steamed or grilled and we have chosen the latter one which is grilled with fresh herbs and garlic butter. Besides, there was quite a few choices for sided veggies including baby corns, snow peas, cream spinach, tomatoes on vines, and young beautifully roasted golden brown potatoes.
The lobsters had been grilled until perfection with the flesh being pulled right off the shell easily. The whole piece was covered in garlic, herbs and a layer of crumbly bread crumbs to create a nice golden crunch on the surface. The very on-point roasted young potatoes were another highlight of the dish with an aromatic peppery rosemary flavour rushing through the buttery and powdery texture of the starch.

It then came to the end of our meal with a sweet finish. A bowl of crumble goodness prepared with a mixed of fruits including green apple, peaches, bing cherries with vanilla essence, topped with a layer of oat based crumble crust, served with some fresh sweet pouring cream on the side. The tartness from the cherries complimented nicely with the sweet finish from the soft peaches, not too sweet but you may still find the slightly burnt caramelised flavour from the sugar.

Nothing beats a good cup of espresso after a very satisfying meal. The aromatic cup was served with a cute little piece of chocolate biscotti, just a beautiful finish to a fancy dining experience.
