This restaurant's design was was inspired by the Antelope Canyon in Arizona and the decor was already a great start to this lunch.So back to the food. For starters, I chose Asparagus and Lobster. The asparagus was light and really loved how they incorporated the canyon design into the asparagus panna cotta. The lights flavors of the asparagus component were complemented by the strong flavors of the ham and egg yolk which was an amazing dish.

For the lobster, the lobster was springy and the tomato was really juicy as a finishing touch. However, the aroma of the tea Long Jing was not as prominent as I hoped for.

I was hoping to try the snow aged wagyu but it was not available that day so I tried their first dish, the Fish. This dish is inspired by pickled fish so it has a tarty and spicy component to it, which makes it really appetizing.  The mandarin fish and the seared scallop were perfectly cooked.

Finally, for dessert, it was Chuanbei Ice cream. The thinly sliced green apple not only provided the aesthetics of the dish, it was also to balance the dessert. I tasted the icecream on its own and it was a bit strong. However, the tangy apple slices(I guess that's why they chose green apple) toned down the strong flavors. So, remember to have both components in the same bite to appreciate the dessert.
