Takano was awarded Bib Gourmand (no star) by Michelin. The place opened at 6pm and the line was already a mile long. I got there just 5 mins before 6pm and was lucky to get the last table of first round. The restaurant has a humidity controlled room to prepare the ramen noodles. The noodles went thru the rollers six times. Ordered shoyu ramen and the Aguni Island salt ramen. We waited for about 30 mins as we all walked in at 6pm and they apologized for the delay. We both found the noodles 🍝

We both found the noodles 🍝 a bit too al dente for us. They could stay in the water for an extra 15-30 seconds in my opinion. The texture was good but a bit too firm for us. The sliced pork was very good though.

The shoyu soup base was a bit too salty/strong for me while the Aguni Island salt soup base was just right.

All and all, the overall experience was good.
