To all the meat lovers, here is a 1kg dry-aged T-bone that will fulfill all your meat cravings with both tenderloin and sirloin in one serve. Cooked over charcoal filled with aroma from the grill, serving in nice medium rare, pink in the middle with super charred outer crust. It’s my first time having such a gigantic piece of grilled meat, commendable cookery but some thicker parts taste a bit tough and dry. Can’t say it’s the best dry-aged beef I’ve had, but still a solid one.

Meat is best with condiments, 3 sauces on the side including béarnaise, red wine reduction and Bordelaise. The deep flavored red wine reduction is my personal favourite.

The potato side dishes may be the supporting act to the T-bone but still remarkable enough to leave their mark. Warm fluffy and super crispy triple cooked chips is certainly unbeatable. But the jalapeño mashed potatoes did come as a surprise, the chili kick elevated the humble creamy mash to a whole new level of tastiness.

It’s such a beautiful showstopping dessert! Essentially an upside down apple tart, with deeply caramelized apple on super crispy puff pastry. The apple tartness cut through the sweet caramel achieving the perfect balance. And there’s just something therapeutic about watching the creme fraiche slowly dropping onto the tart. There’s only one way of eating this, GET MESSY WITH IT!
