If you love Tsukemen, you should definitely try Fuunmaru.You can select the noodle portion from 200g, 300g, 400g (+5hkd), and 800g (+45hkd). You can also choose if you want it warm or cold.The noodle is chewy and cooked to perfection (they timer it!). The cha-shu is so thick but not hard.
