HSBC premier card has a "Buy 1 get 1 Free" promotion at Pierre for their 4 course tasting menu. Recently they have changed their menu to a truffle themed one.We didn't request for a window view but still got one. The view was exceptionally stunning especially at night, which a great way to enjoy dinner.The amuse bouche was already off to a great start. The server kindly explained to us each of them and that we should start with the meringues as they may lose their crunchiness if we wait too long

Before I describe each dish, the truffle menu used a lot of truffles yet it complemented the tastes of the dishes instead of overpowering it.

For the first course, it definitely lives up to its description of check pattern, reminding me of Lady M's checkers. The scallops were cooked beautifully cooked and the thickened chicken broth was more like a sauce yet you can easily finish it all.

For the second course, the sauce and the mashed potatoes were plated into a lovely pattern. The truffle was also cleverly placed so resemble the seared skin of the bass so every bit you can enjoy the bass with the truffle.

For the third course, the foie gras was wrapped inside the ballotine. The foie gras strong taste complemented well with chicken. If you truly cannot tolerate foie gras, you can ask them the server to see what the kitchen can substitute it with.

For the dessert, initially they gave my friend 4 of the dishes which I felt strange, but then I noted it was 4 different desserts and my 4 desserts arrived later. The server kindly explained we should leave the chocolate one till the final one due to its richness but if we want to follow an order, we can start with the truffle and complete this course anticlockwise. Out of all the four, I loved the second one the most due to its ginger and coconut flavor, being the most refreshing out of all 4.

The petit four was a lovely cranberry brownie. The cranberry tartness matched the brownie very well, allowing it not to be too sweet.
