New Year's Eve is such an important day for me because it is also the birthday of my beloved one~ I booked the table a month in advance and expressed some special arrangement for food through e-mail and the reply was prompt and smooth. I choose Aqua primarily because of the location and view of the firework during countdown. The huge glass wall is truely amazing with splendid view across the habour without any obstacles. Dish 1 - sushi platter

This platter has 2 pieces of fatty tuna and swordfish sashimi, one A5 wagyu sushi topped with carvier and two big pieces of taraba crab sashimi. The highlight of the dish is the taraba crab which has pronounced sweetness.
Dish 2 - Hokkaido sea urchin and king crab with cod fish cake.

The tempura style king crab is good, although the crust can be more crispy. The super soft sea urchin placed on top of a semi-firm fish cake make a good contrast in texture. The crab roe cream on the side added abit of freshness to this dish.

This Ricotta ravioli is truely cream, the cheesy ravioli with cheese sauce paired with fresh herbs is nicely done. It would be great if there were more sauce for this ravioli.
I also ordered the Aqua Queen which is a peach based vodka cocktail with some fresh apple dice.

You can have a full view of the fire work with amazing distance and you can feel the pressure from the firework` and the atmosphere in the restaurant reached the peak! This year firework is also very nice with some interesting combinations. After the firework, we continued our dinner~
Dish 4 - Lamb rack

The waiter didn't ask for the doneness of the lamb rack, and it is cook to a default medium rare. Two ribs with additional meat lying on top of the italian ragout, the portion is actually not bad. The sauce match with the lamb nicely and is perfect as my 1st dish in 2017.

Now, this is the disappointing part as I requested their person in charge to put a "happy birthday" on the dessert and none was done but luckily I prepared another special gift and arrangement to keep the surprise on going. Having said that, this dessert was nice. The chocolate moose has a passion fruit emerged in it with a hazelnut crispy biscuit adding interesting palate experience. The ice-cream has many vanilla seed which is also very smooth.
In terms of service, the staff attitude was truly amazing with high EQ standard and tried hard to serve customers but having said that, it is still a hectic night and has room for improvement. I booked my table for 9:40 and the first dish wasn't even ready at 10:40. My bottle of water went missing for 20 minutes because one of the waitress misplace the bottle. My cocktail was not served until I chase them 3 times and came after my 3rd dish. Waitress got distracted at times and forgot to gave us hot water for the pot and similar complaints were heard in the nearby tables. But the manager handle those situation well although these mistakes could be avoided in first place.
As I stated, I came here primarily for the environment and the view and that is already enough and I would say we had a great night.
