These guys don't do just any pho- you have a choice between the "godfather" which fills your bowl with oxtail, short ribs, beef shank, beef tendon, tripe; or there's the "not so typical" pho which simply uses slices of rare beef. I could tell the difference when they use the rare beef- it's a lot softer to chew and has more flavour to it. I could tell the difference when they use the rare beef- it's a lot softer to chew and has more flavour to it. I didn't even add any sauce to my broth and thought it still tasted excellent on its own.

The fried spring rolls were just ok, cheap and a nice accompaniment to my colorful bowl o' pho. Maybe next time I'll try their (expensive) limited edition wagyu beef pho!

With the weather finally cooling down in HK, hopefully I'll be more of a regular here.
