We went for this 6 Shades of Flavor Set. Both of us opted for the Japanese Cod Fish for main. There are also a 4 Shades and 8 Shades of Flavor Set for you to choose from, the difference is in the number of Surprise Dishes.

The Amuse Bouche already set a high standard to kick start the meal. This basket of house made bread was absolutely gorgeous! The croissants were fresh warm and crunchy with a heavy butter flavor. Yum! The little sausage rolls beside were amazing too! Home made butter was really creamy, and for a second I didn’t know what to eat with as the bread itself was awesome.

On the right was this Japanese razor shell with roes on top and chili paste on the sides. It was really fresh and rightly cooked that it’s not chewy or fishy at all! Very enjoyable indeed even to a non-shellfish fans like me.

We were suggested to eat the razor shell with this crème brûlée with sea urchin on top. We were a bit skeptical after the waiter explained the dish to us, but decided to give it a go as we were told. One bite of savory razor shell, followed by one bite of sweet crème brûlée. Our taste buds were shocked with this contrasting sweetness/savoriness, and it was definitely a novel and euphoric sensation!

Second Shades of Flavor is a must have item in French fine-dining - Foie Gras. If you think this pan seared foie gras is ordinary, then you are wrong. It’s not greasy nor stuffy like other ordinary foie gras. The red wine sauce topped up its already very enjoyable flavor. What’s special about this dish is the chestnut puree with Japanese mushrooms and the house made yogurt ice cream. If you feel like the foie gras is a bit too much for you, try eating it with the chestnut puree and yogurt ice cream, which are supposed to ease the heaviness of this fat animal organ. Yet, I decided to eat them separately to enjoy their individual flavors. Nom!

Third Shades of Flavor was this Lobster Tail with mixed pepper sauce under the shell, mustard seed cream sauce and veggie foam in the shell. This dish was a bit ordinary compared to the other wowing dishes, but yet still very delicious. I particularly like the crispy dried kale on the side.

Here comes the second Surprise Dish, rightly described on the menu as “A surprise prepared by Chef to escort you into your dream”.

This flaming piece of meat was a slow-cooked Iberico shoulder flamed with rose wine. We were recommended to enjoy it with the house made red-wine/berries sauce with the pancakes, just like how you eat a Peking duck.
The Iberico shoulder itself was very tender, probably due to the cooking method. The bottom layer of fat just made it very very aromatic and delicious. I tried eating them with Peking duck style for once, and decided to eat them separately as I enjoy to taste the individual flavors more than combining them in this dish.

The Fifth Shades of Flavor was this main of Japanese Cod Fish in saffron clam cream, as well as tomato and red onion underneath the fish. The fish itself was standard, but the clam cream worked its magic to make this dish amazing. The cream had a strong flavor of clams, which added flavor to the fish. The tomato and red onion were like salsa, worked well with the cream to give some refreshing flavor to the main.

Last Shades of Flavor was a Sesame Ball in Japanese tea ice cream with black & white sesame crackers, cherry chocolate, raspberries and popcorn. It was described as a more “casual” dish as you can enjoy it the way you want. The warm sesame ball tasted so good! Actually everything on the dish was very delicious and enjoyable, especially the crunchy popcorn.

This amazing dream-catching food journey ended with a tea. Top one was a jasmine tea, bottom one was my “Sweet Memories Tea” which is a house made tea with a nice scent of lychee. The little cream puff was great, but the coconut chocolate crisps balls weren’t quite enjoyable as they weren’t held together properly…
It was a truly fantastic and enjoyable date night dinner (even though it spread out for almost 3 hours, oh well, it’s French fine dining) with all the surprising dishes and service from friendly staff. There is also al fresco area for shisha, if you are into it. Definitely recommend you to explore this hidden gem yourself!
