Initially the champagne was my least favorite as it was a bit too strong. However, upon the first course, after tasting it again with the Hamachi in vinegar, the flavors totally changed and became much better. Without the champagne, the vinegar in this dish would have been a bit strong too but the pairing with the champagne(despite this isn't a wine pairing dinner) totally solved this issue.

The Bouillabaisse acted almost like a sauce for the Itoyori. It was perfect light main course for the summer.

My friend tried the pork belly. The dish was so fragrant that even I can smell it. Despite the pork belly was seasoned well, my friend felt that the cabbage was the star, being sweet and juicy.

Desserts finally came and the sweetness of the Mirabelle Sorbet was just right. However, my friend and I were totally looking forward to the souflle.

The chocolate souffle finally came and it was amazing. It was airy like a souffle should be yet dense with its chocolate flavors. What sets it apart is the molten chocolate inside where so far I haven't seen any other restaurant being able to execute. Just this dessert alone will be the reason that I will come again.
