Under Vacuum is a place I read about a long long while back but could never really find it. The address is strange. A kiosk in the middle of a park? Under Vacuum is a take away place that serves certain items in sous vide method. Different, right? Now, you know why I had to find it.

The location is the park that is outside the Tsim Sha Tsui East station. It's near the major bus terminal.

Menu is in English and Chinese. As they are take away only, it's cash only, no 10% service charge. They sell sandwiches, snacks and salads along with craft beer. The sous vide items are specifically indicated. They offer a combo of sandwich/salad and a snack for an additional $8. That is in Chinese only.

I ordered a combo. This is the slow cooked steak sandwich with cheese ($48) and an additional $8 for deep fried radish fries. This was served in a small little box. There was a container of spicy sweet Thai chili for the radish fries.

The sandwich was pretty tasty. The thick cut of  steak was moist and literally fell apart.. That's how tender it was. The bread was toasted and the lettuce was fresh.

The radish fries were like small soft chunks of daikon. Sweet and savory, they were nicely seasoned.

An interesting concept for a kiosk. I always thought you can only sell snack items like chips and things but to sell this is a definitely fresh. Reminded me a bit of what a food truck can be like.
