第一道 Surprise Dish 以龍蝦殼寶箱呈現,打開龍蝦殼是意想不到的日本溫室蛋沙律。沙律配上松葉蟹肉,新鮮白桃和法國黑魚子,其中白桃的鮮甜味道一試難忘,兩旁的 mango gel,raspberry gel,更在裝飾以外提升味道。

這道菜是慢煮波士頓龍蝦尾,烹煮過程保持龍蝦的鮮味,入口肉質爽滑。
白色的泡沫是芥末子的 cream sauce , 以分子料理技術打成菠菜泡沫,香而不膩。
下面深色的醬汁是 France paper sorce,以青胡椒、黑胡椒和四川川椒製成,帶輕微辛辣。
伴碟還有山葵葉和青胡椒粒,可以一試兩者的原味。

第二道 Surprise Dish 是日本磯燒鮑魚。以真空慢煮十二小時,上枱時才加上中國玫瑰露酒,出現火光,視覺效果一流,同時玫瑰露酒有助增加香味。
之後再放入由日式昆布湯和高湯混合的湯中,內有白蘿蔔、甘筍和大蒜,味道香濃。
