Omakase由日本傳來香港, 為無菜品餐單,由廚師發辦按當天的食材供應提供。近幾年香港十分熱門。今天出了花紅,朋友介紹早前跟她老闆吃過的這一家,我也決定來試一下。進店的環境十分寬敞,坐在長長的壽司吧枱,看見師父出色的刀功,及用火槍熟練的運用,為平平無奇的晚宴,增添別具一格的表演氣氛。一小支酔樂大吟釀,清甜的Sake,入口順滑,散發出清酒的幽香。前菜是忌廉芝士&布甸&刺身,擺盤器皿配以石米的碟子,彩色繽紛。咸香的忌廉芝士,綿綿的口感,帶子刺身,入口幼滑清甜。米崎珍蠔,珍蠔潔白肥美,入口軟滑清甜,豐富的海水味道,配以土佐醋,吃完一隻會想吃第二隻。甜蝦他他,每一口甜蝦他他富有淡淡的柚子皮香,把甜蝦肉放在鱈魚乾片上吃,咸甜適中,減少膩感。劍魚腩刺身,淡紅色的魚肉,十分肥美,魚油極為豐富,撒上烏叶子,帶有少少咸味,不用放醬油也很夠味道。深海池魚,肉色透明潔白,一小棵紫蘇葉作點綴,除了能吃到紫蘇葉的幽香,也能吃到松露醬油的香味,味道的層次感極為豐富。吃完刺身吃壽司,春子鵰,是幼年的鵰魚,魚皮輕輕一燒金光閃閃,魚質較鮮味濃郁。海鰻,一卷肥美的海鰻,十分厚切,經過火槍燒完後,濃郁的海鰻味道帶點煙熏味

煙燻鰤魚,只見師父把鰤鱼 幼姜 蒜醬油放在小玻璃樽裏面,再用火槍往裏面燒,之后蓋住焗一陣,慢慢打開,煙霧緩緩升起,鮮紅色的鰤鱼肉,魚味極為濃郁,入口幼滑,以薑絲減低魚的腥味。
